Beef Soup
Hi everyone! Hope you're doing well today. I had to go back to work and boy was it tough! I felt like I was dragging all day. Once I got home, I had tons to do- laundry, ironing, cleaning, cooking, baking ahhh! I also ran out and took Body Pump. For dinner tonight, I made beef soup. I based it on Zesty's recipe, but left out the barley and added more veggies (hence it came out as a soup rather than a stew ;) ).

Anything Zesty makes looks so good. I have so many of his recipes bookmarked. I'm on vacation until January 5th and so grateful for my extended break! At least this is short work week for everyone that had to return the daily grind :)

Still on vacay, I love it. This soup sounds delicious. I can't believe all the stuff you manage to get done after a full day of work!!

still on vacation from full time grad school- but it stinks because I have " no money" to really go do fun things over the few weeks I have off... and all my friends have "real jobs" so I start to get lazy. It's nice at first to have four full weeks of nothing you must do - but it gets lonely/restless/boring at times.
looks great! quick question - are those fancy looking carrots frozen? I have seen them around and keep wondering if people are slicing them that way!
I'm at work, and so jealous of those who aren't!
YUM! Stew is the ULTIMATE winter comfort food....okay that totally put me in the mood to make it!

hey! The City was full of drama and beautiful people - just how I like it! There were two episodes on last night, but guaranteed they play them a ton of times before next week, so you should be able to catch them. Happy new year erica!

I am back at work too and I hate it. Vacation life is SO much better. What are you doing for New Years? Any fun plans. I work tomorrow but I get Thurs. and Friday off! I can't wait!!
