Sunday/Zucchini fries

Happy Sunday and sorry for being MIA again! Our trip was great and I am glad to be back and relaxing! Today I did a lot of work/practice for teaching. I practiced the new Turbo Kick for an hour this morning and ran quickly through step. I also started putting together a new Hip Hop routine which is coming along nicely, although slower than I would like. I also did some laundry today and ran to the pool! My friend Nikki was there and it was fun and sit and talk with her- shes hilarious. For dinner tonight I made chicken on the grill and served it with zucchini "fries" and a nectarine. The zucchini fries were good, but toooo spicy. They are a Rachel Ray recipe and I recommend the recipe to go as follows:

Ingredients
2 medium zucchini cut into 1/4-inch square 3-inch long sticks -- like fries
Vegetable cooking spray
1 teaspoon dried oregano
1
teaspoon ground cumin
1
teaspoon grill seasoning

Directions

Preheat oven to 500 degrees F.

Arrange zucchini on nonstick cookie sheet. Spray zucchini with cooking spray. Combine spices and sprinkle over the zucchini fries. Place in very hot oven and cook 15 to 18 minutes, turning halfway through cook time. Serve hot. Top with spoonfuls of chili, taco, or bbq sauce.

I just planted a ton of zucchini in my garden. Once those puppies are ready, I'm making those fries!

Just realized I never commented to let you know I had your blog for secret recipe club and I chose to make these zucchini fritters! So delicious! Loved them!
