5 Years? & Meal Plan

Something crazy has happened…I have been blogging for 5 years (as of Tuesday)! I knew my blog birthday was coming up, but didn’t realize how long it had been. I plan to do some sort of giveaway to celebrate these five fun years. Anything you’d like to see in a giveaway? Have a favorite bar? A gift certificate to Trader Joes or Whole foods? A baked good from my kitchen?

This week has been nuts. Work has been a little non-stop and I have been teaching a good chunk of classes. I also have made some delicious recipes. Here are the eats for this week:

Monday: Leftover coconut cauliflower bisque 

Tuesday: Quinoa salad with black beans, corn, & pineapple (I used pineapple juice instead of lemon juice)

Wednesday: Turkey Chili

Thursday: Breakfast for dinner

Friday: Brussels sprouts pizza (more on this to come)

Saturday: Dinner out

Sunday: Coconut crab rice (except I may make it with shrimp)

Few random pictures from the week. I made peanut butter chocolate chip bars for Josh’s work bake sale fundraiser. I used this recipe and added chocolate chips:

OMG HAPPY 5 YEARS!!!!!!!!!!!!!!!!!!!!! have we really known each other for almost 5 years?!?!? we just need to become SILs already - can't we put a little pedal under the medal of your BIL already!?!? I think Kay should audition for Americas Got Talent kids edition hahah! Is pineapple in season or something because it was $2 bucks for a big fatty fat one at BJs this weekend and we totally bought one! It wasn't that good but I never feel like I have pineapple in March!

Happy anniversary! I can't believe it's been 5 years already! This week I tried a new low-fat mac and cheese recipe...and it's actually quite good!

Yay! Happy 5 years!!
I used my cast iron skillet for the first time this week - I LOVE how the chicken turned out. Don't know why I waited so long to use it!

Coconut anything rice sounds awesome! A bunch of friends are donating blood this weekend. I just got my tat so I have to wait 6 months. :(

5 years!! Me too girl. Isn't is so crazy to think of how long we've been sharing our lives on the internet. I think that means it has been almost 4 years since I've known you then. I feel so fortunate. :) xoxo

What - what a milestone! I think I've definitely been following you for at least 4 of those! Love the little peanut dancing and singing! Today on the menu I have homemade chicken noodle soup - I found FOUR chicken carcasses in my deep freeze over the weekend! Anything you decide to do for a giveaway is fine with me. :D

Happy anniversary! Yes, you totally should giveaway a batch of one of your favorite cookies! I'd enter! :) I was hoping you'd post a link to those bars you made. They look yummy! And good for you for donating. I wish I could, but all they ever get from me a drip, drip, drip..and never enough to use then I end up with huge bruises. I just finally decided I wasn't made to donate blood...which is a shame, but what can you do?

Happy blog bday!! 5 years is amazing. I like giftcard giveaways. You can't go wrong with baked goods either though. Those bars look sooo delicious. We also had BFD for dinner tonight!! French toast, eggs, and sweet potato hash browns. Mmmm.
