Mini Peanut Butter Banana Muffins

We’ve been having a crazy kind of week over here! Outside of the usual good stuff (working, teaching at the gym, taking care of the family), Mr.. Frank injured his leg and it looks like he may have partially torn a ligament in his knee. He did the SAME thing, the SAME way about a year and a half ago. He is on the mend, but isn’t allowed much activity (which isn’t a huge change from his usual routine):

On another front, I found a new, favorite muffin recipe! Banana and peanut butter? Awesome. I made minor adjustments.

Ingredients:

  • 3 large ripe bananas, mashed
  • 1/2 c natural peanut butter
  • 1/4 c  no sugar added applesauce
  • 1 egg
  • 1/2 c granulated sugar
  • 1/4 c brown sugar
  • 1 1/2 c AP flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon

Directions:

Preheat oven to 365 degrees F (don’t ask why, I find this to be the best temperature for mini muffins…)

In the bowl of a stand mixer (or you can use a hand mixer), mash bananas. Add peanut butter, applesauce, egg and sugars and mix until well combined.

In a mixing bowl, stir together flour, baking powder, baking soda and cinnamon.

Add dry ingredients to wet, and mix until just combined.

Spray mini muffin pan with non-stick spray. Scoop rounded tablespoons full of batter (or a cookie dough scoops worth) into each well. Bake for ~14-15 minutes or until browning around the edges (can also do the toothpick test).

They look so good Erica! I am more than ready for the weekend. We have our office holiday party on Saturday so that shall be fun! And hopefully I'll finish my Christmas shopping. Poor Frank :( Hope he gets well soon.

Awww poor Frank! He and Toly are in the same boat with torn ligaments. :( Toly is probably much more of a baby though.
Okay, I love that these muffins are mini but fear that would only lead me to eat a dozen in one sitting. :)

i have been on the mend for a while now.

Poor Frank. :( Same thing happened to my parents dog 3 times in a row, he tore his ACL! He had to have his fixed with surgery though.

Those muffins look yummy...I have way too many ripe bananas on the counter top now. Only now I need to find a mini muffin pan since mine went missing in all of our moves!


You know my plans. Plus Kev and I want to see the festival of lights on Sunday. Just need to remember marshmallows and sticks!

Poor Frank!! He doesn't look too upset though...hopefully he'll keep resting and relaxing till he's healed :-)

awwww give Frank my hugs! that's so strange that the same thing happened! how did he do it?? crazy guy! i made a vow before the holidays that i wasn't going to bake anything because i always end up over doing it and then we have so many baked goods leftover and they end up getting thrown out! i MIGHHHT have to break my rule for these just because everyone loves pb & banana right?!
