Christmas cookies!! Last year, I made sun butter kiss cookies and they were a big hit. This year, I decided to use Hershey’s Mint Truffle Kisses and place them on a chocolate base:
Ingredients:
- 1 stick unsalted butter, room temperature
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 3/4 cups all purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Hershey’s Mint Truffle Kisses
Directions:
Preheat oven to 350 degrees F
In a stand mixer (or using a hand mixer), cream the butter and sugars. Add in egg and vanilla and mix until well combined.
In a mixing bowl, stir together flour, cocoa powder, baking powder and salt.
Add the dry ingredients to the wet ingredients until combined.
Use a cookie scoop (or rounded tablespoon) to scoop dough onto a cookie sheet. Press an unwrapped (duh) kiss into each dough ball. Bake for ~12 minutes. Let cookies cool completely before packing.

chocolate and mint = LOVE! I made some salted caramel shortbread cookies (posted recipe) and some red velvet crinkles (will post recipe) new this year. Loved them both.

I love when people bake the kiss cookies with the kiss already on the cookie (I don't like when the kiss is put on after the cookies come out of the over). They're so delicious!

Oh, chocolate and mint are just perfect together. I love all the fun Hershey's that come out around this time of year.
Just restocked my supply of those mint kisses this weekend. To die for. They are my new favorite. Yummmm. In fact, I think I'm going to go eat one or five now ;) The cookies look great. If I have enough kisses left, I'll need to bake some cookies with them too!

yayyyy coookieeeees!!!! i'm not baking ANYTHING this year hahaha - seriously i'm just leaving it up to the italian pros to handle the cookie department - it's my one christmas wish hahaha. but i do HEART anything with mint in it!
Yum! These look amazing! I owe my mom a batch of crinkle cookies ASAP but I can't go a year without some form of these cookies - whether peanut butter blossoms or chocolate mint truffle kiss, I love Hershey's. :)

Hey! Yes- I have considered teaching both actually (and flow). IMO it is only possible to handle three programs at a time (if you have a regular job too). It is just TOO much choreography! If I were to get certified in another program, it would probably be combat or flow
