Coconut Lime Chicken Strips & Swimming

Happy Monday! Hope you all had a good weekend. What did you do? I had a great weekend filled with friends, Kaylin’s first swim lesson & a baby shower. I also donated blood!! I will dive into the baby shower (and food) in another post. This post is going to focus on coconut lime chicken strips and Kay’s first swim lesson.

This month, I was assigned Lisa from Parsley, Sage & Sweet. Lisa is a HUGE baseball fan and used to blog about it. Now, she's all about the food. Lisa cooks and bakes everything from scratch (which is awesome).  I found her take on Edesia’s Coconut Lime Chicken Strips and knew I had to make them. I followed her recipe almost exactly. I subbed regular coconut (for the desiccated coconut) and almond milk (in place of the coconut milk). Although my pictures aren’t very pretty…the result was delicious! Pre-bake:

Ok, onto the swimming! Kaylin had her first swim lesson this weekend with Amy’s Ryan.

I will posting a little more regularly in the upcoming weeks. I’m going to share a pasta salad recipe and I have a couple of giveaways.

Do you love the water?? I was a total fish as a kid and still enjoy floating around.

How cute that little Kay is doing swimming lessons! I took them as a kid, but I'm still not a strong swimmer. I like to float around though!

Love that baby K loves the water - teaching your kids to swim is one of the best gifts you can give them! She's getting so big!! I am an okay swimmer in a pool - in an open body of water? Not so much!

go kay go! i'm kind of shocked they don't make the kiddies where like swimmies or something?? is she in guppies?! haha i just love the name of that (that's what it was called when i was a wee one). i'm not a huge swimmer i have to be honest - i like pools, HATE the bay and pretty much never go in at our summer home but i do love the ocean

i'm excited to hear about this bridal shower! i'm going to one in two weekends - i have to admit i do love a good bridal shower...it's just so girly!

i love the idea of coconut and lime chicken strips. I know my sons would love them- well grant at least and connor would wish he could eta them1 He loves to eat already! love the swimming pics! How fun

Hurray for the club - those coconut chicken strips look amazing! And seriously, Kay is the sweetest. She is a natural in the pool and looks so adorable in her swimsuit! I was on the swim team as a kid. :) Excited to hear more from you in the coming weeks!

The chicken strips sound really good! Love the picture of your little girl in her swimsuit-so cute! I've loved water all my life and swim every chance I get. It is a great low-impact whole body exercise.

I loved swimming when I was a kid, though I was always scared (I was scared of everything). I've never been a great swimmer, but I love doing it!

I am a fish. I love swimming and being in the water!! I think it's so great you are getting her started so early.

That chicken looks awesome! My kids haven't really gotten into coconut yet, this might be a good way to introduce them to it. Your pic is great!

Oh this looks devilishly scrumptious. I love scenes in movies where there are lawn chairs with bikini clad women that are holding margaritas, with the sun eclipsed by beach umbrellas and the kids leaning on pool glass fencing in Perth. Those are great.

Swimming babies are so adorable. They remind me so much of time I taught my little niece to swim. She was just two years old back then, but I already left her in the water after two and a half weeks of lessons. Good thing I could see her through the quality glass pool fencing from Perth so I could guard her. Wow, she was actually a fast-learner.

That baby is really cute! The chicken looks like everybody will be asking for it over and over again. I liked the way you did the plating for the chicken - much like the professional catering services I've seen at long island country clubs.
