E: The Rest: AB Noodles, Oatmeal Chocolate Muffins & Family Time

How has your work week been? The rest of mine has been really nice. Tuesday night, I decided to whip up a batch of my adjusted version of Rachael Ray’s Hot and Cold Sesame Noodles. This time, I used raw, unsalted almond butter instead of peanut butter. I made a noodle packed dish for Josh and a more veggie packed dish for me (I later added and apple to mine too):

We both enjoyed what the almond butter did to the flavor of the dish.

On Wednesday, Josh’s Mom and her friend arrived in town. They were only going to be here for a short time, so I wanted to make them a batch of muffins for their car trip. I turned to Jessica’s oatmeal chocolate chip cookie muffins. I replaced the egg with a flax egg and made mini muffins…they are deliciously addictive!

Thursday was the big day! Josh and I took most of the day off of work for our doctors appointment. Results to come! For dinner, we went to Crave with Josh’s Mom (on the right) & her awesome best friend, Katie.

We started out with Crave’s awesome raisin nut bread:

J got the scallops with green beans and lobster risotto:

And I got a chicken Caesar salad with balsamic on the side (instead of Caesar dressing):

IMG_1508  It was a great dinner!!

And now, its FRIDAY!!! What do you have in store? Today will include a workout, work, dentist, dinner at home and the movies (we’re going to see Hall Pass). Saturday will include teaching pump and ?? Sunday will start with a great brunch with friends followed by cleaning the house & taxes (ugh!). Enjoy it!

i looove cold sesame noodles. i have copied the ones from the WF's hot bar (cold bar? haha) and they are so darn good. i have that top from ann taylor too! but mine is black. it's so soft! you need need need to go to granville's for brunch and eat some of their bread that they give you. last time i had blueberry date bread and banana nut. SO good that i called the next week and asked to buy some hahah. they were like "um, we don't sell it." BOO. good luck with the dentist and taxes! get that tedious stuff out of the way so you can have fun :)

Oooh those muffins sound so good! I've finally added Jessica to my reader after seeing how many delicious things of hers you've made.

Crave looks so good! And so nice you got to go out with Josh's mom and friend. I love hanging out with my parents and Ari's parents and their friends!

I was hoping to know your results, but I guess you are keeping everyone in suspense! :) When I had my ultrasound, the next day I went to work and wore a "It's a Girl" tee shirt. Ah... so fun being pregnant. :) So... dumb question... what is a flax seed egg? Everyone is writing about them lately. Happy Friday!!!

gahhhhh the anticipation is KILLING me! i just don't think it's fair that josh's mom can know but i can't and have to wait until sunday.

hmm well i got to leave work early today because i worked late wednesday and now i'm just procrastinating another 3 minutes until i start doing some thesis work whiiiich will swallow my whole weekend bsh!

That looks like such a fun dinner with family! Caesar salads are amazing. Glad your work week has been good and not stressful :) Mine had its up and downs but wasn't bad overall. So happy it's Friday! This weekend I'll be watching hockey, babysitting and running a race. Hope you have a great one, Erica!

Tonight we are laying low and then tomorrow is a day of shopping & farmers market with my mom, dinner with the fam and the a night out for my best friend's bday. I'm excited! Glad to hear the almond butter worked in the noodles! Sometimes I hear that you HAVE to use PB or the flavour will be off. The muffins sound great!
