E: Pumpkin Granola Bars & Getting Dressed

I love baking!! Anyone else? Its so relaxing and I SO enjoy trying out new recipes. Josh is a big fan of homemade granola bars and likes having them for breakfast. I decided to try a new recipe for pumpkin granola bars from the Comfort of Cooking. The batter:

And the finished product:

The bars definitely have a unique consistency (due to no flour!) and a lot of spice. I enjoyed them, but want to try making them again with a few adjustments.

I also made up a batch of my big oatmeal chocolate chip cookies for my friend David who I teach/taught Body Attack with. Of all the baked goods I’ve brought into the gym, he claims these to be his favorite. Since I took Body Attack last night (low impact!), I figured he’d enjoy the little treat:

Getting ready for Attack last night made me laugh. I haven’t really switched over to maternity clothes yet (I’m mostly relying on longer shirts and my bella bands), but I’m thinking its about time.  Almost looks normal from the front:

but not the side hahahha…

Whats making you laugh this week??

I’m subbing for Body Pump this morning and then have a bundle of work to get through. What are you up to?

You definitely look normal from the front and the back. I bet every pregnant woman wishes that they look as half as good as you do during pregnancy!

The granola bites look yummy. I love trying new recipes. Most of the time I just wing it anyway and hope for the best...just like the peanut butter chocolate chip cookies I made. :)
Have a great Wednesday!

Ha! I used those bella bands like, once. My pants quickly became too small to get up over my butt, nevermind the stomach situation!

You're too cute. Is Body Attack like kickboxing? Or is that Body combat? I'm looking into new gyms so I can take some new classes!

And what's it like without flour? Like chewy or crumbly...

Erica said...

Body Attack is an athletic conditioning type class. Combat is more like kickboxing but combines all sorts of good stuff! More info at lesmills.com

And the bars are very chewy!

You are so fricken cute! I worked with a woman who had the same body as you - she came to visit when the baby was a month old, and her body was back to normal!

I've tried making granola bars, but they never stick together. :(

fittingbackin said...

hehe you're SO DANG CUTE! Love it - and I think those are the exact pants I have - love it - and perfect for shorties. :) Tonight i'm hoping to have fun with my label maker (as this didn't happen last night) and to get my workout on with Austin!

You look SO CUTE Erica! And so true, from the front it's difficult to see! I think you might be the cutest pregnant woman I've ever seen! What a beautiful and radiant smile you have <3

Lea @ Healthy Coconut said...

You are such a cute pregnant woman Erica.

Did you know that you do not look pregnant at all when you are taking pictures from the front? or maybe it's the black outfit. That's a good thing.

Then you go on your side and yes, then we can see the belly.

I want to be active and be workout-mama like you when I get pregnant in the future.

Indie.Tea said...

Your baby bump is so cute! I don't think you're helping my baby fever... But that's okay :)

So many yummy treats! Baking is super relaxing for me too.

Katie said...

Those bands are so great! So many of my pregnant friends have raved about them. I can tell how happy you are from the photos!

I have had a SERIOUS chocolate chip cookie craving lately. Like, I think about them all day! No place near me has really great ones, though, so I might just make some tonight!

Julie said...

haha your baby is going to come out knowing all of the body attack/step routines and with the best rhythm a white boy could ever have!

do you pack josh's lunch everyday? i was just thinking about that tonight about how men never bring their lunch to work unless their wives pack it! so when you said he loves the granola bars it got me wondering if you make his lunch which i think is so adorably cute if you do haha

Holly said...

Oh my gosh, YES - LOVE to bake. There's something so relaxing about it! And comforting, too. What a great idea for granola bars - I love anything pumpkin!

we got alot done at the house this weekend- shingles on the shed, dismounted old fan and mounted a new ceiling fan, prepped another room to remodel!

oh and a long run AND I got to meet my friends baby! We took them dinner on sunday night, met Owen at 5 days old and 9 lbs ! He was crying and crying in my arms and then pooped. All better.
