E: Pumpkin Cornbread & My Favorite Meal

This week has been a little crazy around here. I am excited for the weekend so that I can cook up a storm with Mandi on Saturday & get some relaxing in. What are you up to?

This post is going to be a little bit of a mish mosh of sorts. First, I made Recipe Girl’s pumpkin cornbread for a few special friends:

   This bread is thick and SO yummy. I stole a piece for myself to eat with leftover butternut squash and tomato soup….mmmm. Then I packed up the rest:

This would be perfect for Thanksgiving.

I also received a really fun package this week, the Nordic Ware 4-Cavity Egg Boiler (disclaimer: I received this product for free). I have no idea who sent this to me, but I am in love!

Basically the boiler allows you to cook 1-4 eggs at a time and within 10 minutes, have soft or hard boiled eggs. It could not be easier

I used it yesterday morning to hard boil eggs for breakfast (breakfast/brunch is my favorite meal). They turned out just right:

And, to continue with my breakfast kick, we had breakfast for dinner last night(Brinner, BFD, whatever you’d like to call it).  I used our waffle maker to make up massive Belgian waffles (you can either use a mix or make your own) .

I also made up a simple fruit topping that I learned from Sarah(who is due any minute now!!!!).  I previously made a strawberry version, but  last night opted for a raspberry version.

Pumpkin cornbread yum!!! I may make this for our T-day festivities at work Monday!

This weekend is going to be busy, we have a visitor coming in town tonight then an engagement party tomorrow then I have a baby shower Sunday followed by a bday dinner for The Man... phew!

Ooh I'd love an egg boiler like that! I know it's easy to do it in a pot the old fashioned way but I really don't know how and never do it. Been eating tons of eggs lately as the baby is hitting a big 3rd trimester growth spurt!

LOVING the sound of that pumpkin cornbread, i just might be making it tonight. and i love the egg cooker too, boiled eggs are a favorite of mine in the morning!

Mmm, pumpkin cornbread. That sounds delcious and it looked moist. My cornbread always turns out like saw dust!! I love the new egg gadget too. Have a fab weekend.

I just ate my oatmeal but your waffle makes me want second breakfast!!

The egg boiler looks super cool. I do like to boil a bunch more than 4 at a time though, I'm not sure it would suit me. I've never tried to make soft boiled eggs but I'd like to, do you make those?

MMMMM...the bread looks amazing. I would have never thought to marry cornbread and pumpkin!

now that you have that egg cooker, you will have to make those deviled eggs! haha

That's good that the eggs turn out ok. I've had some accidents with eggs exploding in the microwave and it's not pretty and the smell is awful. Worst, I did it at work :(

Thanks for the cornbread link, wouldn't have found it on my own. I like cornbread recipes using pumpkin puree. I'm still not over using them.

That cornbread looks soo good - when I made mine a couple of weeks ago I started having it for breakfast with nut butter and jam. SO good. Adding pumpkin sounds like a great idea!

i thiiiink i'm going to make that cornbread tomorrow! it would probably go great with the beef stew i promised my brother i would make for him!

also i'm going to need your help for the holidays haha. i plan on giving people granola as a present and i know you do that alot! i love the idea it's so fun and i need youuuuu to share with me the ones you like best to give to other peeps.

also. i'm pretty sure we need to open up a cafe and call it "brinner".
