E: ICBINB Brunch & Giveaway

Sunday brunch was served up at my house this week! As I mentioned yesterday, I Can’t Believe It’s Not Butter! offered to sponsor Mandi and I to throw a little brunch party (disclaimer: we received the following gift pack for free). Since both Mandi & I are brunch fanatics, we quickly accepted! The people at ICBINB sent us a great brunch gift pack to get us started including:

  • Time saving tips and delicious recipes for a healthy brunch
  • $25 grocery gift card for better for you food options
  • I Can’t Believe It’s Not Butter! VIP Kit
  • Cuisinart Non-Stick skillet and spatula

We wanted a simple but tasty menu:

  • Yogurt, granola & green apple mini parfaits
  • English muffin bread egg sandwiches
  • Breakfast potatoes
  • Coffee

A few items were prepped ahead of time. I made the granola on Friday:

and the English Muffin bread on Saturday:

On Sunday, Mandi and Bryan were set to join Josh and I around 10 AM. I got started on the red breakfast potatoes using this ICBINB recipe.  I chopped the potatoes and mixed them with the melted ICBINB, garlic and rosemary.

They went into the oven for 40 minutes and came out looking and smelling delicious:

Next, I put the sliced English muffin bread in the oven to toast up. I also cooked prosciutto slices and scrambled eggs (eggs, egg whites, milk and a little cheese) in two separate skillets. I made the eggs in the Cuisinart Non-stick skillet (this thing ROCKS):

I got the coffee started and the table set (some how I forgot to take a picture of the table :( ). As soon as Mandi & Bryan walked in the door, we were ready to rock and roll. I let everyone assemble their own sandwiches (eggs, cheese, prosciutto if desired) and had the parfaits and potatoes on the table ready to go:

We had an absolute blast and the food was pretty tasty (if I do say so myself). After the first round of eats, Josh decided to cook up more eggs for a second round of sandwiches for himself and Bryan. The eggs came with a surprise:

forgot to mention. my mom makes the waffle paninis all the time- im pretty sure she got it from I can't belive its not butter's website- ive heard her talk about it quite a few times...i think its also cuz she loves the actress from will and grace who is featured on their tv ads all the time <3

Your english muffin bread looks like english muffins when cut! I'm just amazed, I didn't think the texture could be made.

English Muffin Bread... YUM!!! I think I like the recipe for the whole grain waffle paninis! That's a fun idea. The breakfast pizza also sounds awesome! There's so many variations you could do for that. Looks like a fun brunch!

i love icbinb and even though it's not technically vegan, if i am running low/out of earth balance, icbinb is my go-to!

any of their brunch recipes look great...french toast i think is my fave!

I looooove the idea of a brunch party--I might have to have one sometime just for the fun of it ;-) and the video was sooo funny :-P I really like the sounds of the cornbread muffins with cilantro spread!

Your brunch looked like it turned out amazing, and seriously you are the queen of parfaits. I know they are simple to make but mine always seem to end up with me not wanting to eat them at all. Awesome video as well!

That's so cool that you had a brunch sponsored by ICBINB. I think I would enjoy cooking brunch too for family and friends. I love get togethers, especially around food.

Oh yum, english muffin bread! Reminds me I need to make some again soon... may have to try that recipe and stray from my MIL's tried and true recipe.

As for ICBINB.... um the Asiago Herb Muffins sound awesome and actually might go well with the Asparagus Frittata.... thank you alaphabetical order. ;-)

Oh, I'm going ot try the scrimp scampi with the sauteed spinach. That sounds amazing and since one of our other favorites is Salmon with spinach I think it will be a hit.
