E: Chipotle-like Burrito Bowl

First off, I FINALLY purchased my domain name!! You will see my posts popping up at http://www.itzyskitchen.com/ now!! Please feel free to update your Google blog reader :). Onwards….

Someone I know absolutely loves Chipotle….

Unfortunately, there are no Chipotles near our house in SC.

A little birdie recently told me about a Target brand rice product that tastes very similar to Chipotle’s rice.

I ran out and purchased it up and then made this dish for the chipotle lover in my life:

It was a very easy combination of ground buffalo (you could use beef, turkey, chicken) cooked in a little olive oil. Once the meat was completely cooked through (no longer pink), I added beans, corn and salsa. I put the mix on top of the Chipotle-like rice and served it with pineapple & tortilla chips.

I think Josh was in almost Chipotle heaven.

In other news, Menchies finally opened in Mount Pleasant! Mandi & Bryan and Josh & I have all already been there.

It is self serve and totally delicious. According to their website:

I got a combination of angel food cake & strawberry yogurt topped with mango, kiwi, bananas and cinnamon apples:

While Josh got Tart yogurt topped with fruit and cheesecake bites:

We spoke with one of the owners, Jane, and told her how very excited we were for them to open! We plan to be in there once a week. I am in self serve froyo heaven :)

Anything exciting going on this week? Other than the usual work/gym action, Mandi and I are throwing another party next weekend- I cannot wait!!

i'm getting a domain too. i just can't pick a name because vanilla sugar is so popular. congrats girl! who are you hosting with? i was going to use godaddy. good idea? any tips you can lend is oh so helpful

Yay for the domain name! And self-serve froyo places are amazing - I love being able to put on a little bit of everything.
Throwing parties is so much fun! I think we are doing a thanksgiving themed dinner soon

Great job on the Chipotle look-alike! I've had buffalo once and really enjoyed it, not sure why I haven't bought it again? Maybe I need to change that.

This week we are going to a vegetarian/vegan beer tasting dinner for Richmond Beer Week. I'm so excited! Each course paired w/ a different beer, I'm hoping it's good :)

Awesome about the domain!! I bought mine over a year ago and STILL havent figured out how to move and set up in wordpress but Brian;s friend is helping me so hopefully sometime soon I'll have a new set up :)

I'm totally looking for that rice at Target (funny our Chipotle is right by Target).

SOOO jealous of your self serve fro yo!!! I;d give anything for one of those to open around here! Hope you had a fab weekend lady :)

I went to Menchie's today. We have a ton of frozen yogurt places popping up around ATL but Menchie's is my favorite.

And what you made probably had half the calories! I looooove Chipotle, but when I found out how many calories were in a basic burrito, our love affair ended. Well, we see each other once a year to remind ourselves of what we're missing, but it's just not worth it. I'm going to give yours a shot and see if I can figure out some healthier tweaks. Great post!

i love chipotle too but i dont eat it often because my bottom would be the size of montana! glad you found a healthier fix though! target has everything, next thing you know, they're going to be serving burrito bowls.

so this yogurt place here recently opened that sounds similar to menchies - yogiberry - ive only been once but am eager to go back..afterall, they had mini peanut butter chips :) TCBY fell off the face of the earth.

I love recreating Chipotle bowls!! That rice sounds awesome. There is another rice that I love using for the Chipotle bowls but I can't remember who makes it. It's a cuban black bean rice that goes really well also.

I have a Chipotle opening up on the first floor of my office building, but I'd much rather have a frozen yogurt place opening up ANYWHERE in Minneapolis. :(

We have holiday parties already starting for work this week, so partaking in that fun. I also get Thursday off!

I just saw someone asking about hosting in these comments and I have to warn against GoDaddy! My site got hacked multiple times on their server and they were NO help. I've switched to media temple, and their customer service is WAY, WAY better. It's worth it!

Chipotle burrito bowl is possibly the best thing since slice bread. Rice, Fajitas, Carnitas and Chicken, Medium and corn salsa, cheese, and guac on the side. If you have not tried this combo, please enjoy.

I love fro yo places that allow you to serve yourself! It's getting too cold here for ice cream/fro yo to sound appealing but I'm sure it's lovely and warm down in Charleston! :)

we have TONS of chipotles around here! (can i tell you i've never been...) so i think you and joshers should come to ny and we'll go to chipotle for my first time! haha i do know a good many people who are obssessed with it though so i'm gonna pass that target special hint on to them!

hahahaha can i tell you how much i love that you and sarah are on a first name basis now ;) she better know how lucky she is to have you guys as perm customers!

Here in NYC we have 16 Handles for self-serve fro-yo. It's insane. I'm not allowed there. ;)
