Wednesday: Body Pump in the morning, work, hour at the pool with Jenny (!), trip to Whole Foods (Jenny's first time), a wonderful dinner of my version of Green Dog Wine's Quinoa "Stew". Josh had it with ground turkey:
Jenny and I had it with no meat, extra beans:
Thursday: Work (such a slow day today-bleh), little housework, taught 45 minute version of Body Step, took 45 minute version of Body Pump, made Beef and Broccoli for Josh and our friend Jeremy:
Jenny and I ate up all the leftover veggies and beans for dinner. We had gone a little crazy at the farmers market/food store this week and had tons of fresh stuff starting to turn bad in the fridge. You may have noticed based on my dinner descriptions, but I have decided to eliminate "land based" meats out of my diet. I am now eating a mostly vegetarian diet with the occasional sea based protein (shrimp, fish, etc). I made this decision for a number of reasons but mostly because I think it will ultimately lead to much better health.

Fantastic dinner! Oh, and I do the same thing. I'll eat fish/shrimp, but no chicken, beef, pork, or whatever. I find that it works really well for me :)

I follow the same type of diet (with the very rare and ocassional chicken or poultry- as more of a last resort option than anything). I like to call myself a "Quasi-terrian".

I do the same thing! Mosty fish/seafood, some eggs (for added protein boost on hard workout days)...need to begin elimiating the dairy again - ugh!
the dinner stew looks delicious! am saving the recipe- I never know what to do with quinoa!
Thursdays always seem to drag at work for me...but then it's followed by Friday (= weekend, YAY!)

I have been eating only fish, beans and dairy for protein lately. Land meats just don't agree with me. Good for you for choosing a diet that makes you feel healthy.
I don't eat meat, but I will have fish on rare occasions. I only like it in small portions though, like in sushi or a fish taco. I probably have it once or twice a month. I need to get more protein though! I love quinoa. I bought some this week, maybe I will use it this weekend. Great reminder:) Have a fun weekend!
This looks SO GOOD. I'm always nervous to make quinoa and don't know why... I need to give it a go.
I think I have nearly eliminated all meat from my diet as well, though I don't think I ever made a conscious decision to do so! Haven't craved it hardly at all, so I only eat it when I get a hankering. I feel great so I feel no need to force it on myself!

I have been seeing quinoa everywhere but I've never tried it! I need to get on that! This looks delicious. Keep us posted on how the non-meat diet is going, I'm thinking about trying it myself.
I still haven't tried quinoa...not sure why! Your dishes look great! I am sure my hubby would love that beef and broccoli too.
I always feel good when eating mostly fish...but it's hard for me to eliminate chicken and turkey completely. I could do without steak...though I do crave a good hamburger every now and then! I love looking at how you change up your meal to Josh's...gives me good ideas.

I eat the same diet you do... I call myself a vegetarian, but I guess it's more of a "pescatarian" lifestyle.
sounds like a great transition to me! the most "land-based meats" i'll eat in a week are 2 or 3 eggs and maybe 4 oz of chicken. and since doing that (it's been a few months now) i feel AWESOME. but i am eating a LOT more fish.
oh and oddly enough even though i am getting less protein but CLEANER protein my muscles are stronger than ever. coincidence? i think not. i have a feeling chicken/meat etc is just not that good for our bodies

I gave up all meat except seafood a couple of years ago. It worked for a while, but then I started getting cravings for meat so I slowly got back on it. I don't eat it much, but I try to make good decisions about the meat I do buy (grassfed, etc)
I've only recently discovered quinoa & love it! I like your 'stew'!
