How are you? I hope you had a fantastic weekend! We had Kaylin’s BIG birthday party this Saturday, and it was also our 5th wedding anniversary. More on that to come.

This month, I was assigned The Life & Loves of Grumpy’s Honeybunch. Shelby (Grumpy’s Honeybunch- Grumpy is her husband ) started her blog as a record for her children and potential grandchildren. I think that is SO sweet!! She has two grown boys and lots of yummy recipes! I went back and forth on what to make and finally ended up picking her Shrimp Pad Thai. Josh ADORES pad thai. If given the chance, I think he’d eat Basil’s pad Thai every night for dinner (and maybe sometimes for lunch too).
I followed her recipe with just a few changes:
1. I used rice sticks:
2. I was lazy and did not make my own Teriyaki sauce (that Harris Teeter!):
3. I eliminated the red pepper, as Josh isn’t a fan (he usually scoops those off his Basil pad Thai and throws them on my plate ).
The result was delicious! It tasted much more like peanut noodles vs. traditional pad Thai, but I kind of loved that!

Both peanut noodles and pad thai are favorites in our home so this dish would be a winner here.

I'm glad you enjoyed! We love anything that is remotely Asian flavored in our home, I'm the spicy girl while Grumpy, eh, not so much a spicy guy. I usually hear it if I put more than he likes in a dish but he still somehow eats it. lol. Thank you!

When I was in Maryland a couple of weeks ago we stopped at a Harris Teeter and I thought of you! haha I've never been to one but they're GORGEOUS! Can I tell you a secret? OF COURSE. I've never had Pad Thai - gah! Can't wait to hear about your crazy fun weekend :) :)

THis looks amazing. Ive tried a few pad thai recipes and they never turn out right...will try this one.
It is very yummy! But it definitely tastes more peanut noodle esque vs. pad thai ish ;)
I love pad thai....but have never made it at home....def need to give this version a try. I even think I have rice noodles already. Anyway....happy bday to Kaylin and Happy anniversary to you and Josh. Time flies!!!

Anyways, I love Pad Thai's too and have made them at home a couple of times. Mine comes out a little soupy though and not as rich and sticky as the restaurant dish. But your dish looks good, don't see any soup on there, lol!
