E: Week of Dinners

FRIDAY! Even though it comes every week, it is just as exciting each time. What are your weekend plans? We have a couple holiday parties and a blogger brunch.

I tried a few new and few old recipes this week and was happy with the outcomes. I wanted to share them with you. Please excuse the poor pictures…I hate how it gets dark so early now….

1. Sabrina (Rhodey Girl Tests) Ricotta Fritters:

These are DELICIOUS! I used a little less oil (just brushed the bottom of the skillet) and they turned out fabulous. A great way to make a salad a little extra special!! The salad below has spinach, sunflower seeds, artichoke hearts, hearts of palm & the fritters on top:

2. Spaghetti Squash

Such a simple dinner! I roasted the squash up in the oven and topped Josh’s half with a sauce made of garlic, onion, tomato sauce, ground turkey and ricotta cheese. (Mine would be the same minus the turkey):

3. Hummus Sandwiches

Perfect alongside a simple salad or cup of soup. Toasted bread, Sabra hummus, spinach, artichokes, and cheese of choice all melted together:

4. Parmesan Pea Soup from Simply Life

I made a half batch of this soup and topped it with English Muffin croutons. So, so good. Green soup never freaks me out ;)  I wish I had made a full batch.

What did you have for dinner this week? Few other fun items of note, Josh brought me home some beautiful flowers last night -just because (what a man! bonus points!!!):

And we got our Christmas tree! Smells SO good. Can’t wait to decorate:

sounds like a great week of dinners!! i should try the ricotta, i do something similar with goat cheese on salad.

i love sabra hummus-- any easy app/twist on traditional hummus is to take the hummus, add few spoonfuls of bruschetta topping, few torn basil leaves and balsamic. delish!!

I love how you kept the spaghetti squash dinner in the shell! Why didn't I think to do that??? I love spaghetti squash. It's the best way to get my daughter to eat a vegetable because she thinks it is regular noodles!

You are right about Fridays. Every week it is like a celebration!!! I was SOOOOOOO ready for this Friday!!!

I have a question for you guys... how are you constantly getting these sponsored brunches and get-togethers??? Like the Hickory Farms thing and your ICBINB Brunch? How do you hear about these? I am in the Tastemakers program, but haven't heard about anything besides the POM Party opportunity.

All of that food looks yummy!!!!!! I've never tried hummus...might just go buy some now! =D This week I made italian chicken, pasta, sweet potatoes, and roasted veggies for dinner.

Weekend plans are mostly festive, shopping tonight, going to the courthouse lighting tomorrow and cleaning and watching football on Sunday!

Ricotta Fritters... yummmm!

We have a holiday party as well and I'm also going with my Mom to this event called the Bizaar Bizarre tomorrow to do some fun shopping, they have vendors from all over selling foodie stuff/crafts/wines/etc. and it's so fun! I'm really excited :)

I'm SO happy it is Friday!!! I've been traveling so much and still getting over being sick so I'm going to just relax over the weekend.

Well, relax most of the weekend. My Nebraska Huskers are playing a hard game this weekend so I will most likely be stressed out during the couple hours the game is on ;)

I have been wanting to try those fritters SO bad! I have the ricotta, I just need the time :)
And I love, love, love to see guys give flowers "just because." Mainly because my husband never does - but he makes up in other aspects :)

I think we eat the same type of food, I could have eaten the same food you showed. I like getting dinner ideas and yours never disappoint. I have thin buns too that I use for last minute dinner and I always have salad greens, it's just choosing different type of toppings to eat it with.

That is SO true about Friday, right??! Every week, it's kind of like a mini-Christmas. Takes little to get me excited. :-)

ALL of those recipes look delicious (I <3 spaghetti squash), and I'm copying that ricotta fritter recipe right now!

I have no fear of green soup either! Your meals look tasty. I'm going to check out those fritters... Sound yummy ontop of a salad.

I love Fridays too! I get excited when they come around.

2. I use less oil myself too- I find that even 1 tbs is just fine for a few fritters!

3. I am going XMAS shopping this weekend! All by myself (which I like) while PB works and relaxes at home!

ricotta fritters!! it's taking everything i have not to make some now, YUM! love your tree, we have a real one too, but it never put off any smell, bummer!

Oh ricotta fritters! My grandparents make something like that all the time, they mix spinach in it sometimes or zucchini. So good!! Hope you are all doing well! Love your Christmas card picture from the other post! :)
