Charleston Love & Corn and Squash Soup

How has your weekend been treating you? Ours has been fabulous. We have spent a good portion of it in downtown Charleston. Friday night, we met up with some of Josh's friends from work at the Vendue Inn Rooftop Bar & Restaurant:


I was a little nervous that the bar wouldn't offer many vegetarian options, but was excited to find out they had an awesome vegetarian sandwich, Rabbit on the Roof. The sandwich contained "Cucumbers, Carrots, Tomatoes, Roasted Red Peppers, Cream Cheese, Fresh Greens and 3‐Herb Pesto." I got the sandwich on marbled rye with a side salad.

This morning, I taught Body Step and then we headed out to the first farmers market of the year downtown. I picked up some fresh goodies (white sweet potato, yellow squash, tomatoes) and goat cheese:



The farmers market was definitely hopping.

Afterwards, we headed to Pita Pit:

I held off on getting food there because I had a giant tub of froyo on the brain ;). Josh got a chicken crave pita:

And then we headed to FRESH BERRY!!! I got vanilla froyo with mango, pineapple, and kiwi. It was amazing:


Josh got Fresh Berry tart with raspberries, pineapple, and kiwi:

Wonderful day out in the fresh air! We came home and I got to cooking and baking. I made up some mint chocolate chip cookies to bring to my parents tomorrow:


I also made up some soup for dinner. I have been eyeing this recipe Kath put up for some time. I made some adjustments and popped it in the crock pot for dinner:
Ingredients:
¼ cup chopped onion
2-3 medium yellow squash, diced
2 1/2 cups frozen corn
1 15 oz can Lima beans
3 cups vegetable broth
¼- 1/2 teaspoon red pepper
S&P to taste
Directions:
Put all ingredients into crock pot except 1 cup of corn. Cook on high for 3 hours, stirring occasionally. Blend using immersion blender. Turn to low, add in 1 cup corn. Cook for additional ½ hour. Serve with more red pepper, hot sauce, cheese, Greek yogurt, etc!

It was VERY tasty! We had some toasted Flat Outs on the side. Josh had his flat out in quesadilla form.
Now its time to relax! I have a few more things I need to put together for our Easter meal at my parents tomorrow. What have you been up to?

What a fun day with yummy food! Mmm fro yo - I def went by ChikFilA and got a frzoen treat today (totally of the healthy sort haha right?) but it had to be done ;)

Mmm - I've never had fro-yo with pineapple....that sounds delicious! We FINALLY got a new fro-yo place within 15 minutes of me. I'm dying to check it out!

I had every intention of getting fro yo today since it was beautiful out but didn't get a chance to-I'm happy someone did!

And yay for the Farmers Market being back, I love just walking around seeing what goods are there and people watching. And any Farmers Market that involves fresh goat cheese is a good one in my eyes :)

I am not a baker by any means but you're cookies look amazing, I may need to give it a whirl....hope you have a fantastic rest of your wknd!!

I sooooo cannot wait to hit up the farmers market, maybe we will take a trip out next weekend. I LOVE them! I have actually been considering joining a CSA but am worried that we will not go through a whole share and it will be wasteful. I should research it more : )

That marble Rye looks so good! & I wonder if it'd be make-able... hmm.. wrap one dough over another? Amazing.

Oh how I wish I could find some fro-yo in Seattle! They served something exactly like it in Mexico, actual yogurt all frozen-like, with dozens of fresh fruits & nuts to top on it... so amazing!

I adore the name of that sandwich! And it sounds like it had some many great things in it, too!

We went to the market yesterday, but just browsed some. It was nice to just be there again after the long, cold winter.

seriously it's probably one of the best feelings in the world when the farmer's markets start opening up. not that i really have any farmers markets near me hahaha but out east near my summer home there are plenty and i'm very excited for them.

you and josh look so cute at lunch! mazel for finding an excellent veg option and even more for the fro yo! what uuup.

hmm well last night my family went out to eat and we met my brothers girlfriend for the first time. eek! we loved her haha and today i just got back from the gym, celebrated pancake sunday and about to make some cookies for our easter gathering at my grammy's! but i wanted to see what you've been up to all weekend first, obvi.

I love Pita Pit! We had one in Minneapolis but it went out of business. :( But I think I probably would have held off so that I could indulge in some froyo too.

Looks like it was a great farmers market. I'm sad the local winter farmers market is over for now and the spring/summer one doesn't start till May, boo.

We have been enjoying gorgeous weather here, lots of biking!

That sandwich sounds delicious!! I wish there were more Pita Pits around here...I JUST discovered one in Brighton but its such a pain to get to and there for I have yet to go.

I love farmers markets...still a little early for that here, but soon enough! I want some fresh goat cheese!! Hope you had an awesome Easter! Your cookies look great.

Yummmmm. I love the froyo and the Rabbit on the Roof sandwich. Marbled rye bread is delicious! And then the soup- wow!

Rabbit on the roof is such a cute sandwich name! One time I was going home from the farmer's market and someone saw my bag filled with carrots and asked me if I had a rabbit and I said "No, I just eat like one."

Sounds like a fab weekend- I love Farmer's Markets in spring :D I need to check out my local one again soon now that the weather is warmer.

It's nice that most places now offer vegetarian options--makes life a little easier for you I am sure! First farmer's market is SO exciting..summer is right around the corner! :-)
