We all contributed to brunch and had a delicious and beautiful spread:
Ingredients
- 1 cup almond meal
- 1 cup oat flour (ground up oats)
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 3 eggs
- 1/4 cup maple syrup
- 1 tablespoon butter-melted
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
- 1 cup chopped fresh strawberries
- Desired quantity mini chocolate chips
- Preheat oven to 325 degrees-spray mini muffin tin with non-stick spray
- Combine dry ingredients in one bowl, wet in another. Stir wet ingredients into dry ingredients and gently fold in strawberries and chocolate chips
- Place batter into muffin tin and bake for ~12-14 minutes
