Chobani Strawberry Banana Pancakes

It has been forever since I last posted JUST a recipe. I made pancakes for dinner tonight based on this recipe, with quite a few changes:

Ingredients:

  • 1 cup old fashion oats, ground into flour

  • ½ c all-purpose flour

  • 1/2 cup old fashion oats

  • 1 ½ tsp baking powder

  • ¼ tsp baking soda

  • 1 large egg, lightly beaten
  • ¾ c 2% milk

  • 1/2 cup Chobani (I used strawberry banana)

    Directions:

    In a mixing bowl, combine all dry ingredients. In a second bowl, mix together wet ingredients.

    Combine wet and dry ingredients and let sit ~10 minutes.

    Heat a skillet over medium heat and spray with non-stick spray. Scoop batter into pan using a cookie scoop. Let cook until small bubbles form. Flip pancakes and allow to cook an additional minute or two (until cooked through).

    Makes approximately 22 miniature pancakes:

    Next time, I want to add chopped strawberries and bananas into the batter. This time, I topped the pancakes with jam and a little syrup:

    I heart pancakes, as you know. Favorite topping is plain old syrup. But whipped cream is always good too.

    Pancakes for dinner might just be the best thing ever. My husband loves, loves pancakes and I really need to talk him into some oat and yogurt ones instead of the boring mixes. My favorite topping is peanut butter and real maple syrup.

    you mean serving size - ONE GIANT PANCAKE! hahah that would be awesome. love this recipe and i love the idea of putting chopped strawbs & naners in the batter! i bet even walnuts would be just nutty & delicious! i despise maple syrup so that would never be a pancake topping in my life ever - i am a big fan of peanut butter & jelly but i also really like just plain pancakes!

    Yum! wish I had one right now! I love how greek yogurt makes baked goods so light and fluffy. My fav toppings are just about any kind of fruit + a little whipped butter + SF syrup. If I'm splurging....sub the SF for the real deal, pure maple syrup.

    When I was still eating dairy, I loved to top my pancakes with Greek yogurt, banana and maple syrup. Now just maple syrup does it for me!

    This is terrible, but I've never actually made pancakes. I think I'm going to have to give this a swing.

    Love that Baby K likes them - her smile makes my day! I love my sugar free pancake syrup, not sure I could go back to the real thing, unless I am at a diner, then real maple syrup becomes insulin worthy!

    These pancakes look perfect! I always love how you add Greek yogurt into your recipes, I haven't tried it in pancakes yet. I know the kids would love this - just like Kay Kay! :)
