As I mentioned in my last post, I had a chunk of leftovers from this past weekends cookie exchange. One of those leftovers was a previously un-shown container of Hershey kisses:
I had planned to make cookies this week to include in the packages of gifts I’m giving to Kaylin’s teachers at daycare. Once I saw the leftover kisses, I instantly thought peanut butter blossoms! And then I remembered the no nut rule at daycare. I adapted this recipe and made sun butter kisses instead:
Ingredients:
- 1/4 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup sun butter
- 1/2 cup butter, softened
- 1 egg
- 1 1/2 cups AP Flour
- 3/4 teaspoons baking soda
- 1/2 teaspoon baking powder
- Additional granulated sugar (about 2 tablespoons)
- Hershey Kisses
Directions:
Heat oven to 375°F. In large bowl, beat 1/2 cup granulated sugar, the brown sugar, peanut butter, butter and eggs with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and baking powder.
Shape dough into 1-inch balls; roll in additional granulated sugar. Place about 2 inches apart on ungreased cookie sheet.
Bake 8 to 10 minutes or until edges are light brown. Immediately press 1 chocolate candy in center of each cookie. Let cookies sit one additional minute on the cookie sheet and then remove from cookie sheet to wire rack. Allow cookies to cool COMPLETELY before packaging.
Makes ~ 28 cookies.
