M: Easy Go-To Dinners

Do you have those tried and true recipes you always go to when you can’t figure out anything new and exciting for dinners? I certainly do – they are super easy and even better, they are both from moms =) My two favorite moms, actually…My mom and my wonderful MIL.

When I say these dinners are easy, I mean they are easy…But, don’t we all need some simple dinners in our back pocket when life just gets crazy and you don’t have time to pull off a gourmet meal? I know these last couple of weeks have been like that for us, so out came my old recipe cards!

This is my favorite BBQ chicken recipe in the world. It’s my mom’s, and I’ve been eating it for years. It is sweet and tangy all at the same time and better yet, it’s a slow cooker recipe. I LOVE using my slow cooker! Ok, here goes:


32 oz. bottle of barbeque sauce

4 oz. Coke

4 bay leaves

1 large onion, chopped

4-6 chicken breasts

Combine all ingredients in a slow cooker. Cook on low for 8 to 10 hours.

That’s it! I served this up with a baked potato and sautéed asparagus. Perfection!


Onto my second go-to dinner. And, this is so perfect for the colder weather too.

Bryan’s mom’s Easy Vegetable Soup. This soup takes no time, but tastes like it took ALL day =)


On a sidenote, as I’ve mentioned, I’m mildly allergic to beef, so here’s the original recipe and I’ll make notes where I modified it slightly to fit my diet.

Easy Vegetable Soup

2 (15 oz.) cans stewed tomatoes

10-12 oz. mixed frozen vegetables (I use the vegetable soup mix)

1 can beef broth (I use vegetable broth)

½ lb. ground beef (I use ground turkey)

1 small onion, chopped

(I usually chop up the stewed tomatoes a little so they’re not so big.)

Brown meat with the onion. Add tomatoes, vegetables, and broth. Simmer for as long or as little as you’d like. Of course, the longer the better =)

I served alongside some yummy pita chips. This soup is really so flavorful and hearty. Definitely a great dinner for these cold nights!

That sounds really good. Never heard of putting soda on BBQ chicken, but I would definitely try it!

I have heard so much about, but never tried that bbq sauce and chicken recipe for the crockpot. I might give it a go this week though, since yours looks so amazingly delicious. I have heard, I do think I would do it this way, to put boneless chicken breasts in the crockpot frozen, that way they don't dry out. :) do you do yours from frozen, or do you put them in defrosted and raw?

In the winter, believe it or not, my go-to recipe is chicken pot pie. I make a super simple version. I just boil some chicken. Meanwhile I put frozen mixed veggies in a little olive oil, toss it with flour and chicken stock or wine, and then pour cream of chicken soup over it. I bake that at 400 for 30 minutes. Then I put a Pillsbury Crescent Roll on top, bake that for 10 minutes and viola! It takes some cooking time, but the ingredients are easy to keep on hand.

i've seen that Coca Cola chicken before and have always wanted to try it. the fact that you also used my fave BBQ sauce - sweet baby ray's - only solidifies the fact i NEED to make this!!!
