E: Easy Sunday, Easy Sweet Potato “Pasta” Dinner

I had worked pretty hard to get most of my to-dos done on Saturday, so Sunday was a pretty easy day :). I woke up and cleaned the bathrooms. Then, Josh and I headed to the gym for a workout. Other than that? My day was pretty much 100% relaxing :)

Since I had, had a heavier/protein packed breakfast and lunch, I wanted something easy and light for dinner. I saw Heather use her spiralizer to make potato “pasta” last week and knew I had to do the same. I took a small sweet potato and spiralized it up. The small sweet potato made TONS of “noodles”.

I baked/roasted them up in the oven and then topped them with a simple marinara and three cheese topping:

I cannot wait to do this again- SO yummy!

For the past few weeks, I have been participating in Krista’s Thanks & Giving effort. Each week, I purchased two items from the food store to donate to charity. Josh’s work is collecting canned goods this week, so I figured it was the perfect time to send my canned goods in:

Do you try and do any extra giving during the holiday season? What are you looking forward to this week? I think I’m most looking forward to the Christmas parties we have next weekend and listening to Christmas music :).

I definitely need to get a spiral gadget! I have seen so many wonderful dishes created with them, this being one! As for charity, we donated food and my girls helped with donating new toys to local foster children. We're trying to teach them early on to give back.

I'm looking forward to having dinner on Friday with friends that I haven't seen in a few weeks.

I tried once to make curly sweet tater fries w/ my spiralizer but b/c the taters were so firm/hard raw, I nearly cracked the plastic on mine. I probably should have used a thicker blade (was using the one i used for making zuke noodles) so i have never tried again...this looks great.

ok first of all, i think it's awesome that there is even something called a spiralizer...and second, i MUST get one so I can make this immediately! looks so good!

I got a spiralizer last year and I honestly have not used it yet!! Eek! I think this might be the first recipe I will have to try with it. :-) I love using different veggies as noodle stand-ins.

I normally leave the bathrooms for Sunday and that really kills me. I hate cleaning them, but it has to be done!

Okay, seriously, where did you get the spiralizer?? I really really want one, and every time I go into a specialty food store they always look at me like I'm crazy. I just want to spiralize stuff... :(

Oh that's cool, I've seen spiralizers used for zucchinis and yellow squash, but never sweet potatoes. Nice.

potato pasta is genius!! i've GOT to remember that when i'm in a pasta-y mood :)

that potato dish sounds great...i would have never thought of doing that! What a great idea.

For several years, my daughter and I have organized a food drive at her dance studio. She is away at college this year, and I miss collecting the goods and giving them to the local food bank...I must think of something to do with the boys...maybe shopping and dropping gifts into the toys for tots boxes...
