Rachael Ray's Peasto

Friday is so wonderful, isn’t it? Hope you are having a great day thus far. Thank you all for the sweet comments on my last post. I used to dislike my muscular legs, now I love them and all their strength! Never take for granted your amazing body and all that it can do!!

The rest of my work week has been going well. In terms of workouts, Wednesday was a rest day (glorious) and last night I taught 45 minute Body Step & 45 minute Body Pump. This morning, I did a 4 mile run. Love, love running outside!


Earlier this week, I tried out a new recipe, Rachael Ray’s Peasto. I lightened it up just a bit by mixing asparagus in with the pasta and using a less sauce than what the recipe called for. In Josh’s version, I added some chicken.


I wanted to send a BIG thank you out to Josh who got me (a little early) two of the sweetest “Mother’s” day gifts (Frank counts as a child ;)). He got me this funny tshirt, and this book:


I’m already about 50 pages into the book and am loving it.

So cute that he got you a Mother's Day present--I love reading, I get alot more pleasure reading done in the summer though since I have to read so many textbooks in the winter!

I'm always happy to find other people that like Rachel Ray. The main criticism seems to be that she's "not a chef". Well, that's fine with me - I like nearly everything I've ever tried out of her books. They're rustic, simple, and the flavors are often unexpectedly good.

(end rant)

I need that book (hear that, husband?!?!?) - how sweet of Josh to get that for you.

I love doing that with Rachel Ray's recipes. I admit, many of them aren't the healthiest, but they are fast, and if you semi know what you are doing in the kitchen, you can make them a lot healthier with veggie substitutions! It looks like a great book!

I think that's so sweet that you celebrate Mother's Day - hey, being a fur mommy still counts! LOVE the t-shirt, too. :-)

I'm loving the gorgeous running weather here! It's up to about 90, but when I get home in a couple of days it should be closer to 70 for a few weeks. Perfect!

Rachael Ray and all her quirky names for food - peasto, love it! We are having a cinco de mayo party this weekend and some birthday celebrations as well, gonna be busy but at least the weather is going to be nice & warm :D

I love exercising outside too now that it's warm. After a long cold winter, the weather in Nashville is now so nice.

Good job Josh! I always have to remind CD of Mother's Day, and that our dogs totally count as kids.

Yes, next time you're in Nashville, we will dine at the Wild Cow and then go to Sweet Cece's for dessert! :)

I have a 5K race tomorrow morning and then need to prep for our Kentucky Derby Party in the afternoon! I cannot wait! Love derby day! I need to work on my hat tonight though, gotta have a fab hat for tomorrow. :-)

i LOVE rachel ray, I think she is bubbly, great tv show host and some of her recipes are so simple, easy and ready so fast!!! I hate all the 'rachel ray hater websites' so unnessary! why not let people just do their own thing, ya know?!

I love some of Rachel Ray's recipes. Whenever I got bored of cooking, I would watch her show and get new ideas...kept it interesting! This dish looks yummy!

I'm just curious. How many times a week do you run vs. do aerobics/ teach? Have you ever tried a spinning class? And is Body attack like kickboxing...the one I saw at the YMCA down here was, but I wasn't sure if it was the same everywhere!
