Protein Coffee Cake

Happy Wednesday to you all! Thank you all for the sweet compliments on my dress in the last post. I was so embarrassed to write back to many of you and let you know that I purchased that dress around my senior year in high school (2000) at Express haha.

I also love that lots of you want to try the delicious Green Apple Parfait from Charleston's Cafe. It is so so good! I do often make a version at home like the one below:

And its a little on the lighter side from the use of Galaxy Granola (the company sent me this bag but did not require me to do this write up-disclaimer ;)):

How has your week been treating you? Work has been pretty busy for me and teaching has been great(Pump Monday, Attack Tuesday, ran this morning)! We have the Body Step launch coming up next week and Attack the week after, so I've been spending a good chunk of time learning the new choreography as well. On Monday afternoon after work, I met up with my friend Violet at one of my favorite spots:


The weather has been gorgeous!


And last night after teaching, I mixed up a batch of Janetha's Protein Coffee Cake. I love love Janetha's blog and knew this recipe would not disappoint (did you check out her fitness videos she posted yesterday??). I made a few changes to the recipe- I used blackberries instead of apples (Josh isn't a huge apple fan)- so my cake isn't nearly as pretty as hers ;). I used sunflower seeds instead of almonds and skipped the sugar sprinkle on top (I sprinkled it with a little ground flax instead). The outcome (not gorgeous...but very tasty):







I love when berries explode in baked goods:

Ah that protein coffee cake looks so good!! I used to make mini loaves with protein, oat bran, egg whites, and berries that baked into it. I would also spread with peanut butter - so delicious!

I just found Janetha's blog a few weeks ago and absolutely love her! She is full of fabulous ideas!! I am going to have to make this cake. It looks amazing!!

Nothing wrong with wearing a dress from 2000! I have a few items I still wear that I think I had back in jr. high. LOL

I'm trying to move to baking items that are a bit more heathy, I made some of Tina's Pumped Up Pumpkin Cookies the other day with a few modifications and they were yummy! The hubby wasn't impressed though... he's not a fan of pumpkin.

Eeks not good news about beef. I've been trying to buy local grass fed beef, this just gives me all the more reason to!

i wish it were warmer here, not quite yet--only 58 degrees.

Coffee cake just sounds delish!

I love really moist banana/zuchini/pumpkin bread - with chocolate chips : ) I am also a HUGE cookie fan - all kinds pretty much!

When it comes to any kind of food it is really hard to nail down my favorite. It changes all of the time!

YUM! I really want to make that coffee cake! It's one of my favorite kinds, and I'd feel a lot better if the stats were better. Now they are!

That protein cake looks SO good! I need to stock up on a big tub of protein powder so I can make yummy recipes like this one. I'm just so indecisive and some of them are so $$!

josh isn't an apple fan?!?! ahh the horror...haha just kidding. Jason doesn't like mushrooms or asparagus which i LOVE so i do understand when people don't like certain foods!

that cake looks so good! i was thinking of making it and don't have any sliced almonds so was tryingt o think of something else to use in its place...sunflower seeds are a great idea!! i also have pistachios...

oh and I see others asked you about your dress! wow taht was a keeper...express has some cute stuff!

I honestly don't have any baked goods recipes - no joke! I've only made one 'sweet' and it was no-bake!

Too funny about your dress - love that it's an awesome throwback!! I graduated in 2000, too!! (and yes, still have/wear some dresses from that time - love it!)

My mom is the same as you and my dad the same as Josh! I turned out to be 5'11 and my sis about 5'7". So you may end up one day having tall babies. But that pic of the two of you...just glorious w/ the purple dress.

Baked goods. I dont make too many baked breads b/c the gluten situ. however, I do have a banana bread that is vegan and gluten free, soy free, etc...and it's amazing and EASY.

I love that you substituted the berries-- was just thinking yesterday about all the $$ i could save if i bought fruit and veggies that were in season! you are giving me ideas!! My favorite baked good recipe...hmmm...this is so tough. Maybe sour cream fudge cake?? My favorites are all from Cooks Illustrated, which requires an online subscription to view the recipes so I don't know think I can post it, but trust me the desserts are to die for!!
