For din din tonight, I tried a slightly adjusted version of this Rachel Ray recipe. This is VERY delicious (although I think its a love it or hate it flavor)!! Unfortunately, there is a lot of sodium in this meal, so I recommend you use no salt added PB and low sodium soy sauce if possible. I also added extra veggies to my serving which thinned out the sauce a bit and helped out the nutritional stats. I added chicken to Josh's for extra protein and to help fill him up! Here is the recipe:
Rachel Ray's Hot and Cold Sesame Noodles (slightly adjusted)
Ingredients:
1/2 lb spaghetti
1/4 cup soy sauce (low sodium)
1/4 cup creamy PB (no salt added)
1 1/2 tablespoons rice vinegar
1 1/2 tablespoons hot sauce
1 tablespoon veggie oil
1 large package of fresh veggies (broccolini, broccoli, sugar snap peas...whatever you want!)
Sesame seeds
Directions:
Cook pasta according to package directions, rinse under cold water. Meanwhile, in a large bowl, melt the PB in the microwave just slightly. Add in all other sauce ingredients (soy sauce, vinegar, hot sauce, veggie oil) and mix until well combined. Add spaghetti and veggies and stir until well coated. Top with sesame seeds. Serve!

Glad your class went well. Looks like a good dinner too! I went on a long run outside. It was HOT! I loved it though! I made roasted sweet potatoes and roasted asparagus for dinner. It was very tasty. I went to work at 5:30 today, I am beat. Time to relax and get to bed. I have my "procedure" on Friday. Any helpful tips? I am NOT excited. Have a good night friend!

a lot of people don't like Rachel Ray, which I don't really get. I love her bubbly personality, and her recipes are really practical and delicious. your dinner looks freaking awesome.

this is one of my favorite dishes because I get my pb and my spicy stuff in there. plus I love a good cold noodle salad. so many ways to make them. I'm so hungry now.

I don't always love Rachael Ray's recipes but this one looks great! Cold noodles - perfect for summertime.
I have some soba noodles in the pantry, and I should definitely do this to them. YUM! Cold noodles are definitely something I love when the weather starts to warm up. Delish!
