E: Vegan Butternut Squash & Tomato Soup

How is the weather where you are? It is that time of year when the weather can never seem to make up its mind. This past weekend, it was a little chilly in Charleston, but it has warmed up once again. However, this has not stopped my soup cravings!! Sunday, I showed you the first recipe I tried from Jessica Seinfeld’s Double Delicious, Good Simple Food for Busy, Complicated Lives cookbook(disclaimer: we received the cookbook for free from the publisher). Monday night, I gave a second recipe a go: Dairy Free Butternut Squash & Tomato soup:

It was SUPER easy to make (minus cutting up the darn butternut squash):

I used this fun can of Hunt’s diced tomatoes in my version:

Fabulous! The soup is SO yummy and filling. I crumbled a few tortilla chips on top and had a side of toast and fruit.

I searched a little online to find a similar recipe to share with you and couldn’t find anything exactly like it. However, I did find this other awesome Vegan Butternut Squash Tomato Soup recipe.

  4. I have Jessica Seinfelds first book, and her deviled eggs with cauliflower puree are a mainstay in my house! I have made them over and over again, and no one ever suspects cauliflower puree plays such a big roll in the yolk mixture! This soup sounds wonderful....and I have been really into cream soups these days, I am putting it on the list to be made! Do you happen to have the nutritional stats for it? are they listed on the recipe in the book? I would love to know if you have that info available! :)

  7. it's so nasty here lately! monday it hailed, yesterday it was freezing, today it's rained a little, it's suppppposed to get nice this weekend but we'll see! i'm coming to charleston to get your weather thank you!

    i have a bnut squash in the garage that i am procrastinating cutting open just because it's a BEAST to do!

    i bet the flavs of the tomato and butternut were extra delicious together :)

    i've got nothin going on this week other then work and school (which i'm probably skipping haha) but i need to get a jumpstart on my final papers so i'll prob crack into that!

  9. Yum! I love dishes like that. Peeling and chopping a butternut squash has to be right up there with the top culinary pains in the a$$ :-) But they're worth it in the end!

  17. Cutting up the squash is always the worst part of any squash recipe! Sometimes I cheat and buy it pre cubed from Trader Joes :).

  18. Isn't that the beast of it? So many recipes that involve winter squash are super easy, but cutting the darn thing in the first place, ugh! That is when I am so glad for my good knives, and even then it's not easy. Sometimes it's so tempting to buy the pre-cubed stuff...
