Everything but...and a Giveaway!

Hi guys! Friday at last!! I have lots to cover, so I'll try to keep the words to a minimum.

First up, have you heard about Sabrina's I Love Salad! Challenge? Go to her blog and check it out. My contribution? One of my favorite mixes- a Greek type salad containing spinach, cucumbers, artichokes, carrots, feta cheese & dried cherries, topped with olive oil and vinegar:




Second, I saw this recipe on the Fruit Not Fat blog for granola bars and knew I wanted to give them a go. I followed the recipe exactly (for once) and used two varieties of Galaxy Granola:

The outcome:



These bars PUFF up big time!! They're yummy, but more cakey like than granola bar like:

Third, lots of fun BAoK action going on:
  • Lindsay gave Madeline two fun BAoK gifts that really made her day!
  • Janetha (queen of BAoK in my book) gave Lauren a fun Starbucks gift card for her birthday
  • Melissa sent Sarah some Odwalla bars (because she can't get them in Canada)
  • And my fellow future housewife ;) Julie sent me the SWEETEST package containing TJs coffee (love it!) and the best protein powder flavor ever...because she knows how much Josh enjoys it hahaha (you're the best!)

  6. Erica, thanks for the BAoK shout out!!! Linds definitely made my day with her surprise treats:)) BTW, the granola bar recipe looks awesome! I wonder how it would turn out with egg whites only? I might have to get cooking next week;)

  12. I'm so proud of the BAoK progress! I'll be getting on that this weekend. Random Acts of Kindness are so spontaneous and lovely!

  13. I love artichoke hearts and feta, that salad is eight down my alley ;) Thanks for the granola bar recipe, I need to get some galaxy granola.

    Right now I have been busy finishing up loads of schoolwork. One more and I can officially say I am done with undergraduate school!! Can't wait to be free and have more time to blog, haha :)

  14. I'm so excited for this weekend! A big group of friends and I are heading to a winery for the day on Sat. and then in the evening a few of us girls are going out to celebrate my friend who just became single!! haha :) I hope you have an awesome weekend too!!!

    Not up to much this weekend. I do have to go grocery shopping for the first time since getting back from vacation, so I am actually really excited for that. Nerd alert, right here!

  21. wow, i would LOVE to win a ticket to taste the nation!! i've always been envious of people who can go to food events! oh and those bars definitely look more like blondies than granola bars, but nonetheless look amaaazing! now if only i had some galaxy granola to make some with... :P

  30. MMm I want a bar that puffs!! Haha. Those looks really good...I want to work on a bar for my friend who's alergic to tree nuts (she can still have PB), and she's preggers so she wants a good snack with some protein. I'll have to get cracking on that!

    I should get some dried cherries for salads. I love them in Larabars and I love dried fruit in general in my salads, so I'm sure I'd love them in salads too.

    We don't have much planned - run this morning, movie and dinner with my parents, swim + bike brick tomorrow. That's about it. :)
