Stuffed Potatoes, Taco Salads

Whats going on everyone? I am really liking posting a few of my meals at a time, so I think I'm going to keep with that for a bit. Here is how my week has gone so far:

Monday: Man was I dragging after too much time in the car and not enough sleep this weekend! I some how got through work (thank you Starbucks!) and came home to clean up the house. Afterwards, Jenny and I went on a little over 6 mile run. For din din, we did stuffed potatoes:

Tuesday: Work, made up pizza dough for tomorrow night, and taught Body Attack. For dinner we did taco salads. I sprayed tortillas with pam and baked them at 375 for 8-10 minutes. Josh had his with a side of tortilla chips, spinach, broccoli, ground turkey, corn, pinto beans and cheese:
Jenny and I had ours with romaine (Jenny did spinach), celery, pinto beans, tomato, avocado, onion, and bell pepper:

Tonight, I'm going to watched my tivo'd episode of Kendra and watch the new Real Housewives of NJ. I watch such intelligent tv haha.

    How do you manage to clean the house and go on a 6-mile run in a sleep deprived state? I would have passed out!

  6. The stuffed potato looks so good! Our friend made us dinner tonight, we were spoiled! It was so tasty too! I like making our own chips with whole wheat tortillas!

  14. I love the looks of that stuffed potato! I hate how I feel after being stuck in the car for a long time :( Hope you're feeling better!!

    I only watched about 5 minutes of Kendra but I can tell I'll be sucked in! The Jersey finale is next week - what will we do!?

  27. Unfortunately planning and doing have been very different this week! I do feel like if I plan and grocery shop ahead of time I'm much more likely to make healthy choices throughout the week. Thanks for the nice comments and the encouragement!

    And please do not ever apologize for your taste in TV. I have spent the past week watching this last season of the Hills and it's been amazing. Trashy TV is the best way to unwind at the end of a long day!

    I love seeing several of your meals in one post too. That stuffed sweet potato is brilliant. I just bought some huge ones myself at Harris Teeter...might need to try your idea.

    Don't say anything negative about the TV you watch because I'm right there with you with the same shows, don't make me feel worse for watching crap tv then I already do, ha!
