Stuffed Potatoes, Taco Salads
Whats going on everyone? I am really liking posting a few of my meals at a time, so I think I'm going to keep with that for a bit. Here is how my week has gone so far:
Monday: Man was I dragging after too much time in the car and not enough sleep this weekend! I some how got through work (thank you Starbucks!) and came home to clean up the house. Afterwards, Jenny and I went on a little over 6 mile run. For din din, we did stuffed potatoes:
Tuesday: Work, made up pizza dough for tomorrow night, and taught Body Attack. For dinner we did taco salads. I sprayed tortillas with pam and baked them at 375 for 8-10 minutes. Josh had his with a side of tortilla chips, spinach, broccoli, ground turkey, corn, pinto beans and cheese:

Tempeh would work great with this too I think, I love the all in one bowl look.
