Fiesta

Happy Friday!!!! Any fun weekend plans?

Josh's sister arrived last night and will be living with us for the month of June while she takes a class at a local college. We are SO thrilled she is here. To celebrate, we had a mini fiesta last night. Josh's friend Jeremy also joined us. I made Brown Sugar Chocolate Chip Cookies (I used smart balance, egg whites instead of eggs, and both baking soda and powder vs. just soda):


A peach and blackberry crumble:


Hummus and veggies, pretzels, crackers:

Turkey meatballs (1/2 lb lean ground turkey, 1/4 cup bread crumbs, 1/ cup parm cheese, Italian seasoning, garlic, 1 egg white, roll into balls throw in crock pot with sauce- cook) with garlic toast (Arnold's thins) for the boys:
And I made some black bean dip (for the veggies).
It was a yummy little fiesta!
Today is the usual work, then I teach Body Attack, and then we may go out somewhere for dinner. Hope you have a good one!!

  10. everything looks AMAZING. i particularly love the veggie plate....but seriously- why is your baking so perfect!! everytime you post a loaf or cookie or SOMETHING on here, I get hungry!!!

  28. Ooo, Erica, what a perfect celebration feast! The crumble and the cookies look AMAZING. It would be way too dangerous to put those cookies around me :) I could eat quite a few. And those meatballs look like a delicious dinner, too! Sorry I haven't been around for the past week; I had a friend in town and wasn't able to do my regular commenting :( I'm back now, though!

  31. That picture of the cookies looks amazing...they look soft, chewy and melt in your mouth good! I have never tried baking with the smart balance butter. I will have to try it.
