Quesadillas

Hey guys- tonight is going to be a quickie ;) After work today, I did some more unpacking and then ran out to teach Body Step. I used my new panini marker tonight to make quesadillas. I used low carb tortillas (which was a semi mistakes because they don't get as nice and crunchy as the original) and made two varieties: black bean and corn and chicken. I served them with some vegetarian refried beans on the side. Note: I had a lot more than what is shown below:


What would/do you put in your panini maker?

    Good things in a panini maker: quesadillas, wraps, veggies (like sliced zucchini!), pb and banana sandwiches... ok I'm getting hungry now so I'm stopping. Have a good night!

  6. I love sandwiches on a panini. But of course, I think you can do so much, like have a quesadillas! When my parents got the foreman grill for me, my dad said, "quesadillas time!" =D but i left that foreman back home... boooo!

  8. Yummmm! If I had a panini maker, I would definitely use it for quesadillas, wraps and sammies.

    I caught up on your other posts - loved the interview (totally agree with you on animal brain, lol) and I'm glad your tummy is better!!

  9. Technically, I don't have a panini maker, but a George Foreman. I put everything in it--veggie hot dogs, breakfast quesadillas (banana with PB and any other toppings you may desire smushed in a tortilla), grilled tofu, grilled cheese...the list goes on!

  11. Looks great- haha i like your "note"..it's like those little top chef meals where I think...WOW i could eat 10 of those plates :D I have a g foreman grill, which kind of does a panini style- and I know the actual panini makers come w/ recipes that sound amazing..apple-cheese combos?!

  15. OMG what can you not make with a panini maker? I have a quesadilla maker and I love creating different variations. Check out my blog itsawrapteacher.blogspot.com for ideas. My fave? Spicy tuna with goat cheese or black bean/soy crumbles with Mexican cheese blend.

  16. One of the few things my dad doesn't have is a panini maker...he does have a quesadilla maker though but I just use a skillet for that!

    Anything that gets melty and goopy is good to me in a presser like that though!

  17. Mmmm! I am dumb, I never would have thought to make quesadillas in a panini maker. I need to get one of those (a panini maker, but I'd take a quesadilla, too). :-)

  20. We LOVE our panini maker. I usually make veggie paninis. I also grill portobellos or other veggies. I haven't tried a quesadilla yet because we have a ques. maker. I want to try dessert paninis soon!

  21. I wish I had a panini maker. I've been using the Foreman to grill wraps, etc., but I don't think it works quite as well. Too bad our cabinets are overflowing with appliances - I cannot fit another thing in this kitchen!

  22. MMM... I definitely go through phases where I am putting chicken breasts and slices of veggies in there til the cows come home. Eggplant, squash, peppers...just a few of my faves...

  24. I love paninis althought I don't have a press, the diner near me makes paninis using Naan bread I would definitely do that!

  26. ah quesadillas are the best! i love throwing my wraps in the foreman grill, but its also erally easy to grill up some veggies! so quick and simple :) hope you have a wonderrrrrrrrful day my dear!!!!

  27. YUM!!I have a Griddler and I LOVE it!! I like to use it for sliced zucchini, yellow squash, onion and bell peppers as well as whole mushrooms. I just sort of spritz my shrooms with cooking spray and smash them. They get all golden and yummy!

    Fresh pineapple and peaches are both awesome when cooked in the press and, of course, then eaten with ice cream.

    Cheesy sandwiches and quesadillas are always some of my favorite choices too. I keep my little griddler busy!

  30. I have been wanting to make some of your quesdillas for so long now! You always make them look oh so good!

    I would LOVE a panini maker. although im sure about 90% of its use would go towards sandwiches and wraps, nothing too creative! haha

  34. those grill marks are makin' me jealous!!!!!!! i have NO clue what happened to my foreman grill in the west coast to east coast move. the sad reality is that there is not even an inch of space to spare in our teensy tiny nyc apt, so i dont even think i COULD get a new one.

  35. oh that looks fabulous... jeff's mom told me today that her internet at work is shutting it down too? I dont know what the prob could be but if you figure it out id love to know.

    I would do a peanut butter and jelly sandwhich because this one time at the nc state fair, jeff and i split a fried one and the best part was the ooey gooey warm inside.

    I would also do something chocolate, like a chocolate filled croissant.

    hmm, bacon tofu spinach ?

    mushrooms, swiss and black beans

    turkey, kale and cheddar and apple slices

    pepperoni and mozzarella and tomato

    dates and peanut butter

    buffalo chicken and blue cheese crumbles

    brie, walnuts, cranberries and some preserves

    i could go on and on but now my finger hurts!
