Weekend & Giveaway

Thank you all for the kind words (again) regarding Josh’s broken ankle. A lot of people asked how they missed the break the first go round. We went to an emergency walk in center and a radiologist wasn’t working there on the weekend. Since the break wasn’t completely obvious on the x-rays, it wasn’t caught until the radiologist reviewed the x-rays on Monday. Also, a bundle of you asked about the dish I baked the pasta in- it is one of Rachael Ray’s and I absolute love it! Her dishes come in lots of fun colors.

This week has been nutty between work, teaching at the gym and taking care of Josh and Frank. BUT- there has been lots of fun and good eats too. After work on Friday, I met up with Lindsay for a misto at Starbucks:

IMG_0081 Friday night, we did some barbequing at home. I grilled up some jalapeno burgers for Josh (ground beef, ketchup, chopped jalapeno & onion, and chile powder):

This morning, I taught Body Step & Pump, relaxed, did some housework and some work work. I wanted to get Josh out of the house so we took a quick run to Chick-fil-A (Josh loves their nuggets and fries).  I got a big salad and one of their parfaits courtesy of a coupon Lindsay gave me (thank you :)).

A month or so ago, I won a contest on Janetha’s blog and received my very own Tofu Xpress.

This is a very cool kitchen tool, but I’ve just decided that at home tofu making may not be for me (or enough for me that I would use this frequently). I know a lot of you out there would love this. If you want to win, just let me know in the comments and tell me how you normally prepare tofu. The contest will be open until midnight tomorrow (August 1) and the winner will be randomly selected.   2. aw glad you're having a wonderful weekend! i've been enjoying this wonderful weather we've been having (although rain is forecasted for the week! yuck) by playing tennis with my dad and taking long walks in the morning :)

    i would loooove the tofu xpress! i get so impatient that i rarely ever drain my tofu properly. i just marinate it real quick and dump it in the wok for a stir fry. yum!

  4. Oh your poor guy! I hope he is doing better.

    I have seen that gadget, it looks quite neat. We don't eat soy at home (I do like tofu, so have it once in a while when we eat out), so I don't have the best home for it, but I am sure many people would love it!

  6. I am just learning to use tofu in my recipes (I was scared...). I usually try and dry it out best I can and marinate it before tossing in a stir fry or with some veggies and italian seasonings. The other night I was trying to press it and used on of my gigantic college physics textbooks... it came out all wonky and crooked so it had weird holes in it. Sigh. I definitely want to get one of these guys! It looks so much handier (and less messy :)

  8. Ooh I've never looked at Rachael Ray's dishware, but it makes sense that it would be awesome! And I normally "cheat" with my tofu... I buy pre-baked and pre-seasoned stuff from Trader Joe's!

  9. We actually don't have a Starbuck's in my town, but it's ok, because I am in love with Caribou Coffee! Do you have those down south, or is that just a northern thing? Hope you enjoy your Sunday!

  12. I just got caught up on Josh's ankle. I'm SO sorry to hear that it's actually broken! I can only imagine that he is in the best of care though - as I've said before, him and Frank are two lucky guys! :)

    Love the blogger meet-ups this week! Burgers sound awesome, too.

    I would love to win the Tofu Xpress! I love making barbecue tofu but my favorite recipe of all time was one I made with a Ginger-Peanut sauce. I've been on a mission to recreate it but seriously can't stand pressing tofu with paper towels. This would be awesome!

  13. Tell Josh to follow the docs advice - as someone who has broken a lot the ones I followed what they said are fine the ones where I pushed it well my ankles ALWAYS hurt! As for how I cook tofu? Hmmm I like it scramed because I can not figure out the pressing thing. I am dying for the tofu express so it will make it possible to have things baked and not just scrambled -- I have the flavors down just not textured

  17. I usually press it, coat it with something, and bake it. But lately i haven't cooked it at all because i always forget to press it in advance and i have no time to cook. I hope i win!

  19. Omg I would LOVE another tofu press!! I have one that I am addicted to AND have a block pressing at all times..not kidding! I could so use another! I am so sorry you didnt love it :( but I do...haha!

    I love preparing tofu either in an Asian-style stir fry with noodles, veggies and soy sauce, OR baked with some olive oil, salt & pepper.

  21. I normally marinate tofu in a mix of soy sauce, ginger, garlic, red pepper flakes and maybe some sesame oil and then make it into a stir fry.
    Delicious!

    Great idea to give this away - you're a wise lady to know yourself!

  24. i love preparing tofu in a marinade i made up myself that includes San-J soy sauce (the best!), tamarind, agave, ginger, garlic and coconut oil then baked... I can even get The Man to eat this stuff too believe it or not!

    I love making tofu-kebabs! marinated tofu, pineapple, zucchini, mushroom and tomato and pop it on the grill and wait(impatiently:).
