Greek Style & Workout Wednesday

How is your week? Mine has been the usual hectic-ness- but I’ve been enjoying every minute :) I was really excited to see the Athenos Challenge that has been going on around blog world. P1090266

Athenos feta is one of my favorite brands and I am a HUGE fan of Greek style salads. With the weather getting hotter and hotter in SC, cooler dinners have become more appealing. On Monday, I made up a ginormous Greek salad with spinach, romaine, sun dried tomatoes, artichokes and feta. I later also topped the salad with some hummus (mmm):

On the side, I had a chunk of my homemade focaccia bread.

The focaccia was supposed to be for a blogger meet up we were going to have on Monday night, but due to various circumstances, we had to reschedule. Guess Josh and I will have to eat all the focaccia ourselves, bummer ;). I also had a big bowl of melon:

Josh had a big salad too, but minus the feta,sundried tomatoes and hummus + shrimp. I also made a grilled artichoke and cheese sandwich for him using the focaccia:

How are your workouts coming along this week? My schedule is looking as follows:

  • Monday: Ran to warm up, Taught Body Pump
  • Tuesday: Taught Body Attack
  • Wednesday: Off
  • Thursday: Teach 45 minute Body Step, 45 minute Body Pump, Body Step launch practice
  • Friday:  Teach Body Attack
  • Saturday:  Teach Body Step & Pump
  • Sunday: Off

This week is a little heavy, so I plan to be super lazy on my off days ;). Do you have any group fitness questions? Keep them coming! I have the Group Fitness post in the works. Enjoy the rest of your work/school week.

PS- Anyone get these in the mail yesterday? I can’t wait to try them- Eggos bring me back to my childhood!!

    We have our Group Step launch tonight - I hope it goes well....

  6. Your workout schedule is INTENSE! Good for you... your weekly schedule is very inspiring to me :). If you can work full time and do all of that I should be able to get my butt to the gym too!! :)

  9. hahahahaha oh my god eggo waffles are SO circa 1990 commercial with the young kid and his dad and the waffle pops out of the toaster and the dad grabs it and then the kid snatches it from him and goes "dad leggo my eggo" hahahahahahahaha

    anyways we need to talk about the hwives finale! seriously HOW MUCH is danielle legitimately (i can't spell that word) psycho. like almost too much!

    have a great rest day today and be SUPER lazy!!!!!

  10. I got those egg pizzas yesterday too! I'm pretty excited to try them out!! Andrew had a ridiculous amount of fun playing with the dry ice that was in the package, haha! ;)

  13. I rediscovered my love for feta about a month ago. My tastebuds have been deprived for so long! I actually just bought the exact container as you a few days ago. Hmm...Eggo pizza? Looks kind of good, not going to lie! By the way, I'll gladly take one of Josh's sandwiches ;) Artichokes and cheese? Yes, please!

    Did you see RHNJ Monday night?! Craze!! I also saw a rumor (which they already denied) that RH was coming to D-town. I was SOCLOSE!! Happy Wednesday :)

  14. That salad looks great...Your schedule reminds of my group fitness teaching days...Driving from gym to gym teaching at least 3 classes a day...I miss it sometimes.

  15. LOVE feta! Next to goat cheese, it's my favorite. :-) I need to get some sundried tomatoes to add to my salads....that sounds delcious!

    "Leggo my Eggo" hahaha I loved those commercials as a kid. Those pizzas look FANTASTIC. I can't wait to see if you like them!!

  17. I LOVE feta! It goes so well with so many things... I put it in a quinoa/pepper/salmon salad last night and it was so good!

    Good lord, I remember Eggos! I had a babysitter who used to make them for me with American cheese and maple syrup. It was surprisingly good!

  21. I'm totally contemplating teaching here in Spokane, but I don't know how much time I'm going to have with my school schedule this next semester plus all the renovations we will be making on our new house. I haven't taught a class in over a month, and I'm missing it!

    i love feta too! its so good on a salad in the summer time I also love it sprinkled with oregano! now is the time you should totally make that watermelon/feta app we had in boston!

  31. I was so disappointed not being able to indulge in your focaccia. It looked so good. I've been eating fruit like a mad woman. Not that I'm complaining though. I haven't gotten my pizzas yet, but I'm waitin! ;) I just had a salad with sundried tomatoes at Taco Boy. Why can't I remember to add those to my salads at home? Maybe we can grab some coffee or a walkaroo this weekend!

  33. My workouts are going well! Although, I had to take off today - my legs were a little sore from yesterday's run so i'm taking it easy!

    Those eggo pizzas look interesting... I want to hear more about it!!

  39. Waffles are a serious weakness of mine : ) I get the chocolate chip eggo's for Jake sometimes and I end up doing some damage to them - they are sooooo good!

    I JUST started a blog this week after stumbling upon some amazing food and exercise blogs that really inspired me. I saw yours mentioned on a page I was reading (i don't remember who's it was) and was excited to see someone writing who was also in Charleston. I didn't know the blog world existed until about 2 weeks ago so this was very exciting for me :-) Once I started reading it I realized I have taken your step class a bunch of times! I am an ESAC member and take step every chance I get. I LOVE IT. You are a great instructor. So i figured I should say hi :-)
