Buitoni, Weekend & ER

Hello! Sorry to have gone a bit MIA- this week and weekend have been a bit hectic. How has your weekend been so far?

Our weekend started off with a taste test courtesy of Food Buzz and Buitoni.  I received a coupon for a free (disclaimer!) meal for two from Buitoni and ran out to my local Publix to use it up. Unfortunately, they didn’t have any of the vegetarian Buitoni entrees, so I purchased this Shrimp & Lobster Ravioli for Josh to test out:

I cooked up the meal according to the package directions and it could not have been any easier (one pot meal!).  I only used about 1/8 the sauce top the pasta. As others have noted, it comes with a TON of sauce (which is better than not enough). Once the meal was ready, I handed over this meal for two to my 6’3”ish husband to attack.

He obviously thought it was terrible ;)

“The seafood taste was light and not overpowering. The sauce was impressive for having arrived frozen – although there was enough sauce for 8 plates of noodles.”

So there you have it! After dinner, we headed out to meet friends and to listen to live music. Fabulous.

This morning, I taught Body Step and then headed over to my favorite place to meet Lindsay for breakfast. I got the usual coffee…

After breakfast, I ran home to get ready to go to the pool for some sunshine. Just as I was about to put on the sunscreen, my cell phone rang and it was Josh…he had very badly twisted his ankle playing basketball and needed to go to the ER. After x-rays and an exam, it was determined that nothing was broken- just a very bad sprain (his ankle is ginromous). Poor guy can’t put ANY weight on that leg/ankle for four days and then it will take about a month+ to fully recover. He is hobbling around on crutches.  I was supposed to travel for work this week, so I am working on trying to rearrange my trip. Off to take care of my patient. Whats on tap for you for the rest of the weekend?

  1. Sounds like a great day! Although any day that includes coffee and an apple parfait with a friend is going to be wonderful. And I need to try that lobster ravioli!!

  3. Oh so sorry to hear about josh :( Dan actually did a very similar thing playing soccer. Hope he's not in too much pain!

  7. Twisted ankles suck! I had one a few summers ago and wore a stretchy brace type thing that my husband got me from the pharmacy. It helped so much since I have to walk so much at work.

  9. Yikes!! That totally happened to me the first week after we moved to Germany! It sucked. My ankle got black and blue and my whole foot swelled up. I was on crutches for 2 weeks!

    I hope he feels better! You are such a great wife for taking care of him. ;)

  11. Hope you were able to reschedule your trip. That's such a bummer. So thankful he didn't break it though. :) I'm in the clear for alone time. Dad just rolled out and P headed back to bed. Ahhh...the house is quiet.

  12. I love pasta dishes every once and awhile, but I am usually skeptic of frozen meal kits, but it doesn't look half bad! And poor Josh, hopefully his ankle feels like brand-new soon :-)

  17. So sorry about Josh. Sounds like he needs to get in the pool to take the weight off his ankle.

    Have you ever tried Rio Bertolini's Fresh Pasta at the farmers market? My friend Brian is the owner and his raviolis are AMAZING! So many flavors to choose from.

  20. Poor Josh!!!! I hope you can work it out to be home for him a little. Sprained ankles are the worst. Remember when I sprained mine during cheering and took the ambulance hahahah. I hope it heels quickly!!

  21. I can't tell you how many times my boyfriend has had to go to the hospital for basketball related injuries. Hope Josh's ankle heals soon!

    so glad josh is doing okay too and that he has you to take care of him!!! :)

  28. AWWWWW JOSH!!! i hope he's feeling better! ankle sprains are totally the worst. but on the bright side he'll be able to tell when it's going to rain because it'll ache when the pressure drops. haha sorry. but he better feel better! just ask frank to hold an ice pack on his leg for him ;)

  29. I've seen that ravioli and would love to try it, but alas Ray can't eat it :-( shellfish allergy. And I don't think I could handle it by myself! I hope Josh's ankle recovers well, and yay you may get out of your trip!

    Ok, I now REALLY want to try that apple parfait!

  30. Oh, no! I'm so sorry to hear about Josh's ankle. :-( Been there, done that...and it's no fun. It took me about a month before I could work out again!

    One thing that REALLY helped me was putting my whole foot in an ice bucket (I'm sure you know/have heard this)...it hurts like *&^% but it really helps to take down the swelling intially! Hope he feels better soon!
