Baked Sesame and Bread Crumb Crusted Tilapia Fingers

Thank you all for the sweet comments on the launch pictures! I have one more coming up- Body Attack! We are dressing up all sporty, so I will make sure to take a few pictures to share. I’m soooo glad its my last launch, my head is about to explode from all the new choreography!

Are you having a good week? Mine has been pretty nice so far. I wanted to share one of the creations I made up this week, Baked Sesame and Bread Crumb Crusted Tilapia. I used Aggie’s awesome fish finger recipe as my starting point and just adjusted a bit (I made a scaled down version of the following recipe since I was only making the fish for Josh):


Ingredients:
  • 1 lb tilapia, cut into chunks
  • 1 cup whole wheat flour
  • 1 egg and 1 egg white
  • 1 cup bread crumbs (or panko)
  • ¼ cup each black and regular sesame seeds (or you can just use regular, the black just makes it a little “prettier”)
  • Cayenne pepper
  • Salt & Pepper (if desired)
  • Cooking Spray


Directions:
Preheat oven to 400 degrees.

Setup three bowls: 1) Whole Wheat flour with desired about of cayenne pepper mixed in, 2) Egg and egg white mixed well with a fork, 3) Mix panko/bread crumbs & sesame seeds

Place a cooling wrack in a cookie sheet and spray well with cooking spray. Dip tilapia chunks in flour mixture, then egg, then bread crumb mixture and place on cooling wrack. Spray coated tilapia with cooking spray. Bake for 10-12 minutes, flipping once in the middle.

Josh’s tilapia was served with roasted butternut squash and a pear (I had the same squash/fruit but served mine with a giant plate of scrambled eggs & salsa ;)).

  6. That dinner looks great! Actually, I was supposed to go snowboarding this weekend in Austrian, but I twisted my ankle teaching a spin class! Crazy, but I'm not surprised at the random method of injuring myself! So, hanging out with friends and school! I'm going to try some aquajogging out this weekend too. Have fun teaching!!!

    I don't know how you keep all of the choreography straight! I would be flubbing it all.the.time. :-) Can't wait to see your pics!

  19. The Baked Sesame and Bread Crumb Crusted Tilapia Fingers look amazing!!! When I was pregnant, I ate fish. I am actually allergic to it and break out in hives, but I craved extra protein and I wish I had had that tilapia recipe on hand...b/c tila can be kinda bland but you doctored it up beautifully!!!!!

  21. deej needs to buy tilapia pronto so we can make those little fingers! have you ever bought swai fish? it's so good and if josh likes tilapia he'll most definitely like swai its very lean and not fishy at all

  29. That recipe looks great! I'll have to remember it when we are in FL. The first place we are at has a full kitchen and we have friends down there who supply us with lots of fresh fish!

  31. The tilapia looks awesome!!! I was just thinking of throwing this fish into the dinner mix next week and now you just gave me the perfect reason to do just that. ;)

    Hey girl, I wanted to ask you something about the Colonoscopy. I know that the prep is the worst part, and I just got all of my info for that. I realize that you need to clean your system the day before and not eat solid foods, but what are some things that you ate leading up to the procedure. I know that in the evening I have to stop with pretty much everything, but were you able to eat ANYTHING all day? I am afraid of not eating all day! :( Any advice you have I would be so grateful.

  36. Oh goodness, what a great idea to add the sesame to the tilapia! I bought some tilapia to freeze weeks ago and haven't made it yet...now I know what I need to do ;o)

    Loving all the launch pictures! I've been catching up and it's all sooo exciting. Can't wait to see the next one although I'm sure the choreography is definitely crraaazy! I can't imagine -- I'm super impressed by you!

  41. what a fabulous idea and recipe!! I love seafood, and was always a fan of breaded nuggest and fish sticks when i was little! (well, i was REALLY picky about the brands, and my Mom never served me the junky stuff, but YA). these look great! tilapia is one of my most fav. white fishes!

  43. I love that expiration date article. I tend to freak out about such things and have thrown away more than my fair share of foods that were probably FINE. I think I take "When in doubt, throw it out" way too seriously sometimes.
    We had our Triple Challenge today at the gym and I had a blast. I LOVE the new Attack release, especially the agility tract (track?); it was so much fun. I know you don't teach Combat, but this release was really intense. This was my first launch party and hopefully not my last.
