Wednesday: Body Pump in the morning, work, hour at the pool with Jenny (!), trip to Whole Foods (Jenny's first time), a wonderful dinner of my version of Green Dog Wine's Quinoa "Stew". Josh had it with ground turkey:
Jenny and I had it with no meat, extra beans:
Thursday: Work (such a slow day today-bleh), little housework, taught 45 minute version of Body Step, took 45 minute version of Body Pump, made Beef and Broccoli for Josh and our friend Jeremy:

Jenny and I ate up all the leftover veggies and beans for dinner. We had gone a little crazy at the farmers market/food store this week and had tons of fresh stuff starting to turn bad in the fridge. You may have noticed based on my dinner descriptions, but I have decided to eliminate "land based" meats out of my diet. I am now eating a mostly vegetarian diet with the occasional sea based protein (shrimp, fish, etc). I made this decision for a number of reasons but mostly because I think it will ultimately lead to much better health.

Yayyy for tomorrow being Friday!
Fantastic dinner! Oh, and I do the same thing. I'll eat fish/shrimp, but no chicken, beef, pork, or whatever. I find that it works really well for me :)
ReplyDeleteQuinoa is one of my all time favourites :)
ReplyDeleteYay for no meat!!!
ReplyDeleteI follow the same type of diet (with the very rare and ocassional chicken or poultry- as more of a last resort option than anything). I like to call myself a "Quasi-terrian".
ReplyDeleteMmm Quinoa stew? Sounds awesome girl.
Hope you have a very happy Friday!
yum!
ReplyDeleteSOOOOOOOOOOOOOOOOOOOOOOOO glad it is friday.
ReplyDelete'nuff said.
oh. that beef with broccoli looks delicious!! :)
ReplyDeleteit's friday!!! so exciting!!!!
yes, i am so happy it is friday. SO happy. :)
ReplyDeleteYum! I will take some of the no meat version!
ReplyDeleteYummy looking stew! Sounds great both ways...
ReplyDeleteHave a fantastic weekend!
I do the same thing! Mosty fish/seafood, some eggs (for added protein boost on hard workout days)...need to begin elimiating the dairy again - ugh!
ReplyDeletethe dinner stew looks delicious! am saving the recipe- I never know what to do with quinoa!
ReplyDeleteThursdays always seem to drag at work for me...but then it's followed by Friday (= weekend, YAY!)
enjoy your day!
Looks yummy!
ReplyDeleteYay for Friday! :D
The "stew" actually looks tastier without the meat, and that means a lot coming from me!!
ReplyDeleteI love that plate that your food is on in the last pic--so cute! Have a wonderful weekend :-)
ReplyDeleteI'll take your version of the stew :D That sounds really good!!
ReplyDeleteKudos to you for eliminating the land animals! That's great! I hope Jenny had a great first time trip to WFs!
Enjoy your weekend!!
Woot woot for GDW stew! :) LOVE your version!!!
ReplyDeleteI have been eating only fish, beans and dairy for protein lately. Land meats just don't agree with me. Good for you for choosing a diet that makes you feel healthy.
ReplyDeleteI don't eat meat, but I will have fish on rare occasions. I only like it in small portions though, like in sushi or a fish taco. I probably have it once or twice a month. I need to get more protein though! I love quinoa. I bought some this week, maybe I will use it this weekend. Great reminder:) Have a fun weekend!
ReplyDeleteThis looks SO GOOD. I'm always nervous to make quinoa and don't know why... I need to give it a go.
ReplyDeleteI think I have nearly eliminated all meat from my diet as well, though I don't think I ever made a conscious decision to do so! Haven't craved it hardly at all, so I only eat it when I get a hankering. I feel great so I feel no need to force it on myself!
ReplyDeleteHave a great weekend. :)
I have been seeing quinoa everywhere but I've never tried it! I need to get on that! This looks delicious. Keep us posted on how the non-meat diet is going, I'm thinking about trying it myself.
ReplyDeleteI still haven't tried quinoa...not sure why! Your dishes look great! I am sure my hubby would love that beef and broccoli too.
ReplyDeleteI always feel good when eating mostly fish...but it's hard for me to eliminate chicken and turkey completely. I could do without steak...though I do crave a good hamburger every now and then! I love looking at how you change up your meal to Josh's...gives me good ideas.
Hi Erica! Both dinners look amazing. I love Quinoa and your creations looks rather tasty!!
ReplyDeleteBeef & Broccoli looks fab too!
Good for you for deciding you want to change your diet to best suit you! :-)
Have an amazing Friday!
That stew looks SO GOOD. There's a sack of quinoa in my pantry begging to be used up!
ReplyDeleteI eat the same diet you do... I call myself a vegetarian, but I guess it's more of a "pescatarian" lifestyle.
sounds like a great transition to me! the most "land-based meats" i'll eat in a week are 2 or 3 eggs and maybe 4 oz of chicken. and since doing that (it's been a few months now) i feel AWESOME. but i am eating a LOT more fish.
ReplyDeleteoh and oddly enough even though i am getting less protein but CLEANER protein my muscles are stronger than ever. coincidence? i think not. i have a feeling chicken/meat etc is just not that good for our bodies
ReplyDeleteand tripe comment..
ReplyDeletelove this meal. it looks delicious.
Your quinoa stew looks very flavorful and filling! Yay for Friday!
ReplyDeleteI am doing the same thing! I will continue to eat fish and maybe some chicken once in a while. I'm glad you shared your experience and that it's working well for you :)
ReplyDeleteHappy Friday!
ReplyDeleteThe quinoa looks great - I love quinoa with beans. I think I'd like that better than the meat version!
Enjoy your meat-free weekend! :)
I just stocked up on quinoa - your stew ala Alison looks awesome!
ReplyDeleteyum-tastic!
ReplyDeleteif the food tasted half as good
as the pictures look-scoreeeeee.
Lol, I still think Friday is better :)
ReplyDeleteI gave up all meat except seafood a couple of years ago. It worked for a while, but then I started getting cravings for meat so I slowly got back on it. I don't eat it much, but I try to make good decisions about the meat I do buy (grassfed, etc)
I've only recently discovered quinoa & love it! I like your 'stew'!
ReplyDeleteseriously, i need to get on the quinoa train- looks so delicious and just so very healthy!
ReplyDeletehappy weekend!
