Pulled Chicken

After I made Aggie's Pulled Pork(delicious), I knew I wanted to make pulled chicken. I wanted an EASY recipe, so I came up with the following-

Ingredients
3 frozen chicken breasts
1/2 bottle bbq sauce
1/4 cup hot sauce
3 tablespoons brown sugar

Directions
Mix bbq sauce, hot sauce and brown sugar. Place frozen chicken breasts into crock pot and pour sauce on top. Cook on high for 3-4 hours (since you're cooking from frozen, you want to make sure you kill any bacteria). Remove chicken breasts to cutting board (chicken should be falling apart) and shred with two forks (or a fork and a knife).


Remove sauce to a separate bowl. Put shredded chicken back into crock pot. Add desired amount of sauce back in, stirring until pulled chicken has desired consistency (some people like it more saucy). Keep crock pot on low until you're ready to serve.


We had one of Josh's good friends over for dinner tonight, so I made Josh and his friend oven fries and pulled chicken sandwiches.


How is your week going? Mine has been busy but good! So far, week has gone like this:

Monday: Work, workout (run 4 miles/practice new body attack tracks- 1/2 hour), clean house
Tuesday: Work, workout (taught Body Attack), laundry/iron, real housewives of NJ (loving it)
Wednesday: Workout (Body Pump), work, errands, ??

  3. That looks great! I was wondering what temperature you cooked it at? I saw that you put it low and I'm kinda iffy of cooking chicken at a low heat!

    I love your blog, but if you are going to make some additons, I would love to see more of your breakfast ideas. I just love breakfast posts, probably because its my favorite meal of the day. :)

    I am feeling ok. Still have icky tummy days, but not as bad. Maybe I am just getting used to it though:)

  12. pulled chicken is awesome, i just did something similar with pork tenderloin and a blackberry bbq sauce (from coconut & lime), can't wait to try it!

  15. Oh my goodness, BBQ is one of the few things I miss about eating meat. Especially since I'm originally from eastern north carolina (where the good stuff originated, believe me, its even on Food Network). Sounds like a busy week, hope you're at least taking some time to enjoy it.

  22. i guess this is just one of those dishes that cant really be vegetarian-ized...

    the consistency of fake meats just isnt the same, and why ruin a good thing. yours looks great!

  23. My hubby made something similar with left over chicken breast. But all he did was cut it up and slop a bunch of BBQ sauce on it. It looked really nasty and I refused to eat it.

    Totally not thought out like your recipe. Yours looks great!

  26. Thanks for the idea, I was just thinking "What should I make for dinner tonight?" I am going to go home at lunch and throw some chicken and sauce in the slow cooker. We love pulled anything!!

    BTW I didn't know you could use frozen chicken in a slow cooker. I had heard that you shouldn't. Anyone know why?

  27. I wonder if you could do this recipe with a cheaper cut of meat? My mom used to roast a whole chicken, serve the legs/thighs for dinner then tear the rest of the meat out with a fork to make chicken salad. Hmmm. I should try this!

    You know Erica, you seem like someone who would really love the Institute for Integrative Nutrition. They just started a distance learning program, or you can go to NYC like lots of people do. Have you ever checked it out?

  28. Sabrina/all- I did some research on the whole frozen foods in a slow cooker and they said at too low a temp, it could allow bacteria to grow? Not sure....but I'm going to adjust my suggestions to only cook on high! Just to be safe.

  33. How cool--my mom and I were just talking about pulled pork sandwiches and saying we wanted some! I never ever thought of pulled chicken which sounds even better! And this recipe looks super easy and fast--thanks for sharing! I think it would be cool if you could add more healthy baking since I am a bake-aholic and always looking for inspiration.   35. Oooh - I LOVE pulled pork and chicken! It's one of my faves, for sure. I need a crock pot so badly. (um yeah I just need to suck it up - I know they're super cheap!) :-)
