I wanted to post this very cinco de mayo appropriate recipe today (in case anyone is looking for ideas). For some reason I forgot to pull the pic off my camera so I will post it later.

Homemade "Refried" beans from Eating Well/Food Network:

Ingredients:
1 teaspoon oil
1 small onion, chopped
1 jalapeno pepper, chopped
2 15-ounce cans white beans, rinsed
3/4 cup canned diced tomatoes with green chiles or tomato salsa (I used a combination or taco and tomato sauce because Josh doesn't look tomato chunks)
1/4 cup shredded Monterey Jack or Cheddar cheese (optional)

This was really yummy! It makes a TON of beans, so be prepared to have leftovers :). Picture to come later! Enjoy your Monday!!

Glad you had fun! I love your dinner salad. Josh doesn't eat red meat but does enjoy chicken and pork. Luckily he usually fixes it on his own:) I don't mind, but it is nice when he does..ha! Have a good week!!
