Spinach Meatballs

Hi guys :) I'm thrilled its Thursday night! It has been a busy day for sure! After work, I took Body Pump and then cleaned the apartment. For dinner, I made sort of a random combination of things- Meatballs and Broccoli!

Ingredients
1 lb ground beef
1/4 cup Parmesan cheese
1/4 cup bread crumbs
1 tsp Italian seasoning
1/2 tablespoon garlic powder
1 egg
1 cup spinach cut into thin pieces

Directions
Preheat oven to 350 degrees. Mix all ingredients until combined. Roll into approximately 1 1/2 in diameter balls. Bake for 20 minutes or until no longer pink in the middle. Add to sauce warmed on stove:

I also cooked up some shell pasta for Josh (sorry its dark...the lightening in our apartment is terrible):

Josh and I got a fun package from Josh's mom today that included dried pineapple (!!) and this oat bran from TJs! Does anyone have any cool recipes using oat bran (bars, cookies, breakfast items??):

Phew! Still tons to do tonight. Hopefully I tear right through it. I try to get as much done on Thursday nights so I don't have as much to do over the weekend!!

  7. mmm, i love adding spinach to meatballs :) if i have a chance i'll do a quick search on oat bran recipes...

    thanks for asking, I am loving boston so far. Still need to get out on the town, but it feels very much like philly, so it was easy to feel "settled". almost unpacked, too! haha, I think i'm down to 1 box.

  9. You are so not weird! I always use veggies as a base instead of pasta, broccoli being my favorite.

    Sammie always uses oat bran, and I ate an excellent Sammie inspired meal the other day. It would be great for b'fast, but I actually ate it for dinner :) I made 2/3 cup blueberry tea, and then added 1/3 cup oat bran. I let the bran soak up the tea - 10-15 minutes or so. Then stirred in 1/2 cup Greek yogurt, blueberries, and some dry cereal for crunch. Topped it all off with a mini scoop of almond butter. It was creamy and delightful. Highly recommended!

  13. I love the recipe's simplicity and addition of spinach! I like the idea of putting it over broccoli, but I love pasta too much to pass up!!!!

    I've never used oat bran!

    ChocolateCoveredVegan uses oat bran in some yumm breakfast recipes, she got me into it, but i dn't have any sorry

  16. I think meatballs over broccoli totally trumps pasta! I'm serious! That way I could have a slice of garlic bread or something on the side and really be set :o)

  20. I usually have broccoli as a side dish when I make something spaghetti sauce, but why not just sub it for the pasta. Thanks for a great combo idea. Isn't it funny how sometimes mixing things that sound weird usually taste the best.

  22. I think your dinner looks great. I cant believe I hadnt thought to BAKE meatballs before. especially after making turkey meatloaves in the oven. It just occured to me after reading this. THANK YOU. It will save me a messy pan to clean. :)

  23. I don't think that's a strange combination! I love putting spaghetti toppings on vegetables. They pair really well together!

    My job is going well- but I'm a 'job' gal, not a 'career' gal. I look forward to the day when my title is 'homemaker.' :-)

    i've had success with substituting oat bran for AP flour in muffins before, but i usually just grind up oats in my food processor instead of buying oat bran...i'm pretty sure its the same thing

  27. The meatballs sound great! I love making up a batch and having them in the freezer for whenever I'm ready. The meatball and broccoli combo looks really good.

    My only idea for oat bran is muffins. Boring, i know. :)
