Pierogies

I am sad that it is my last day working from home :( I really have enjoyed being able to control the flow of my day! Sighhhhh. Any who- enough whining!

Did you enjoy your Thursday? I got to work early early again. I took a break to take Body Pump and then finished off my day. After work, I cleaned the house and got my oil changed. The best part about the place where I get my oil changed is that it is connected to a Starbucks ;)

Tonight I made an easy, easy dinner (I'm not sure you can even call this making dinner haha). I boiled up some Mrs. T's MINI Pierogies. Before I went to Penn State, I had never even heard of pierogies. My freshman year roommate introduced me to them and ever since then, I get a craving for them once or twice a year. Basically its like a ravioli but instead of just cheese inside, there is potato and cheese (or onion, or broccoli...there are a bundle of varieties):


I also boiled up some edamame and corn to serve with the pierogies. My bowl:

And baked up a piece of Chicken to add to Josh's bowl:

I also ended up adding some chickpeas to both (not pictured). It was very yummy. You can also fry the pierogies, but I prefer them boiled!
Time for a shower and some relaxing! Weekend plans???

  6. i've never heard of those before! i'll have to see if i can hunt them down! but do they always have cheese? lactose intolerance would make those no so great then...

    and this weekend...i work, the whole thing...into next friday. oiy!

  7. I haven't had pierogies in years! My mom used to buy them when I was a kid.

    I'm going down to Raleigh to visit a friend this weekend, then I may look at some of the new model homes when I'm off on Tuesday.

  8. my freshman year roomie introduced me to perogies too! they're good with sauteed onions and some sour cream! i've never seen the mini ones though, they are too cute!

  10. mmm, pierogies, i almost forgot i have some (homemade) ones in my freezer from xmas!! something to look forward to :) you definately have to try making these yourself sometime!

  11. I've never heard of pierogies until now! Quick and yum dinners are definitely a good thing though! : )

    That's so exciting about your parents!! I'm currently six hours away from mine (and my sister), so I understand that must be exciting!

    You should definitely go to that movie and have some fun for me, haha ;) (We'll try to fit in at least a little fun, though! That suggestion of treating ourselves sounds nice)

  12. Haha I'm such a dork - I voted for Tina (Carrots n Cake) in the Boboli Pizza contest and the first thing I thought of when I saw "pierogies" was the pierogie pizza that's also a finalist. Are these just like a polish ravioli?

    Anyway! Weekend plans may include a Orlando trip (we're a little over an hr away), and maybe a free comedy show on Sunday night. And it's a long weekend cuz hubby gets school (he's a teacher) off Monday for MLK day!

  14. my dad is part polish- I grew up in pittsburgh PA and had these Mrs T's all the time! I also went to Penn State Main freshman year!!!!
    Did we already establish that? well if we did- i forgot and i did not rememeber you went there too! :-)

    i asked the same thing on my blog about weekend plans before i checked your post! hee hee- I don't actually have plans at all!

    I can't believe you can only walk frank 1/2 mile!! poor thing!
    Jack cut his jaw on something- what I have no clue- I am terrified because it looks like a cancerous tumor.

    so i will probably make a vet appointment this weekend

  19. I don't think I've ever had pierogies. They sound goood! Ugh, our Whole Foods did not have the chocolate cherry Bumble Bars today. So wanted one after both you and Heather said they were the best. Bummer!

    Weekend plans - treating my mom to a massage (by me) and lunch for her birthday on Saturday. We're leaving the hubbies behind for a girly day. :)

  22. The Polish girl in me loves pierogies! I haven't had them in ages, but I think I always had Mrs. T brand! I didn't know they made Minis - I'll have to look for those!

    Too bad you can't continue working from home. But I'm glad that you enjoyed it while it lasted!

  27. That is most definitely making dinner! Putting food on the table doesn't always have to be time consuming. Sounds like a great weeknight meal! What kind of analyst are you?

  29. Looks so yummy! I have a 3 day weeknd :) I think I am going to the lake with my family on Saturday so that should be TONS of fun!

    My lunch soup was vegetarian store bought minestrone and my soup at dinner was homemade - def. loving the homemade soup more!

  32. they look kewl- i've never heard of them, oh but i love the corn/edamame combo- yum!
    I found somewhere in Australia that sells those bumble bars you were talking about, they only sold one flavor though- the chai & almonds. Anyway i'm really excited to try it thanks so much for showing me these bars- didn't even realise they existed before

  34. I have never seen mini pierogies - how cute. I used to buy pierogies all the time but have not in a while - you just reminded me that I like them - thanks. This weekend we are going to a my nephews 3rd birthday party at some sort of playhouse - lots of noise and craziness.
    I bought the Vita Coco at Whole foods.

  37. I had never heard of perogies either until a roommate in college had them adn I tried them as well. I like to use them in place of ravioli for pasta dishes :)

  38. Oh pierogies! i'm from Pittsburgh, where we eat them all the time! Of course, I can't find any vegan varieties which stinks :(

    I’ve never heard of Pierogies. My hubby likes potato dumplings (gnocchi). He would totally love pierogies.

  44. Love pierogies! My husband has Polish blood in him so they were a big deal in his family. They are from Penn. Did I know you went to Penn State? I went to Purdue - gotta love the Big 10.

    I tried making them from scratch once and they were just okay. I'm going to give it another shot some day.
