Black/White Bean Dip

I cannot believe its Sunday night already! Sigh- I don't want to go to work tomorrow!! Today was a pretty relaxed day. I slept in and then took Body Pump at 10. Afterwards, Josh and I ran some errands including looking for a washer and dryer for the new house. Most of our afternoon was spent watching football. For dinner tonight I wanted to make a mix of foods. I made some chicken fingers for Josh and then mixed up some fruit for both of us to share:
I also made up some pita chips and a black and white bean dip based on Liz's recipe:

Ingredients:

1 can black beans
1 can white beans
1 cup frozen corn kernels
7 oz. hot salsa
2 cups shredded co-jack cheese (I used 2% Mexican cheese)
1 cup chopped tomatoes
garlic salt to taste
cilantro to garnish
1 tsp cumin
2 tsp chili powder

Directions
Preheat the oven to 350°.

Rinse and drain both cans of beans. Squeeze the liquid out of tomatoes before chopping so the dip doesn’t turn runny. Put all ingredients except cilantro and cheese in a bowl and mix together. Grease a shallow baking dish before spooning in the bean mixture. Sprinkle a little cheese on top.
Bake for 20 minutes until the cheese is melted and the dip is heated through. Remove from the oven and top with cilantro.



I made up about half of the dip (that picture makes it look wayyyy cheesier than it was ;)). The remainder (without the cheese), I froze with additional veggies and I will bring it in for lunch this week. Are you ready for Monday?

  3. I'm not ready for Monday at all :(. Having issues with the owner of the restaurant (she is dragging her feet on my recommendation form and its making me resentful...I'm a bad person).

    The dip looks way yummy.

  4. haha i stared at the fruit salad for about 5 minutes trying to figure out what the white things were- and then i figured out they were apples.

    I always have mixed feelings about Monday- excited to skate, but also nervous for the hard work. It's fun and also so sooooooooo tough. Whew, I try to just take it one day at a time!

    I do not want to work tomorrow either! I think my office mate is out all week, so at least I'll have the place to myself if I'm grumpy.

  16. Wow that dip does look cheesy...and so good! Am I ready for Monday...no, not really. First day back. I've gotten use to sleeping in which means 7 AM. That 5:30 AM alarm is going to hurt!

  21. Yeah, I just recently started making yogurt (partly because of the price of Greek yogurt, I understand!) My first batch didn't turn out, but after reading a little bit about what might have gone wrong I tried again and it really didn't end up being too hard, just a bit time consuming the first few times until you get the hang of it more. We go through it so fast though, so if I keep up with it, I tend to have to make it more than I'd like to! lol. (but it's really good and probably worth it;)
