Potato Coconut Corn Chowder

It is that time of year when soup is what I want for dinner pretty much every night. I’m always looking for new recipes/ways to switch up my usual soups. When Secret Recipe Club time came around (As a part of the club, each month you’re assigned another Secret Recipe Club blogger to make a recipe from. If you want to join, click here to sign up), I knew I was going to be in search of a new soup recipe.

This month, I was assigned Cupcake Muffin. Sara started her blog because she figured she cooked and baked enough to “warrant snapping a few shots and posting them.” Her experimental blogging started in 2007 and is still going strong today! When I saw her potato coconut corn chowder, I knew I had to give it a go. I used Harris Teeter’s lite coconut milk:

  added in frozen peas and lima beans (in addition to the corn) and topped our bowls with chopped jalapenos:IMG_2217

oh no the link to the recipe doesn't work! :( i made something that is probably really similar. mine was a bit spicy bc i added so much cumin. obviously i loved it though, haha

it's soup season! you're the QAWEEEEN of soups so I'm excited for a winter chock full of them! I made peanut curry soup last night and can't wait to get home to a big fat bowl of it hahah xoxo!

I'm going to have to try this since my little one is allergic to dairy and most potato soups call for milk.I like the idea of the coconut milk.

Cumin's not actually spicy. More smoky. There must have been something else spicy in your soup. But spicy is good in the winter because it warms you up!

coconut in a corn chowder- now that is creative and intriguing and it sounds plain delicious to me! I want to try this! Now if only i had some coconut milk in the house:(

Yes! I know it wasn't the cumin ;) As I noted, I added diced jalapenos!

I adore soup for dinner, especially those that use coconut milk. In fact I made one tonight which I'll hopefully get posted soon. I do have quite a few wonderful soup recipes on my blog so I hope you'll check them out.

I love Sara's blog! I love coconut milk - adds such a dimension to dishes! Well, of course you know I love my lasagna soup, but my other favorite is my mock Panera Bread broccoli cheddar soup.

I'm on a soup binge too...but the difference is, I'm not making most of it at home :(

I need new recipes that will inspire me in the kitchen and this looks like a winner. Thanks for sharing, I'll go check out the recipe
