Baked Cinnamon & Sugar Pumpkin Donut Holes

Last weekend, a few of us threw a baby shower for one of our friends who is due in December. Everyone brought a brunch dish to share. I made three different kinds of muffins, vegan banana chocolate chip, Jessica’s graham cracker chocolate chip muffins, and baked cinnamon & sugar pumpkin donut holes (muffins).

I made the donut hole muffins because the mom-to-be is a donut fanatic. I wish I had taken extra time to get better pictures of these beauties. They’re totally delicious and disappeared in a flash! I used a recipe from the comfort of cooking which was adapted from the fabulous Maria (two peas and their pod).

I made a few minor adjustments. So yum.

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoons cinnamon
  • 1/4 teaspoons nutmeg
  • 1/4 teaspoon ground ginger
  • 1/3 cup canola oil
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup skim milk

For the Coating:

  • 4 tablespoons unsalted butter, melted
  • 2/3 cup granulated sugar
  • 1 1/2 tablespoons cinnamon

Directions

Preheat oven 350° F. Spray one 24-cup or two 12-cup mini muffin tins with baking spray and set aside.

In a medium bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg and ginger. In a separate large bowl whisk together oil, brown sugar, egg, vanilla, pumpkin and milk until smooth. Add dry ingredients to wet ingredients and mix until just combined.

Divide batter evenly among muffin cups. Bake for 10-12 minutes, or until a toothpick comes out clean.

While the muffins bake, melt butter in one bowl and combine granulated sugar and cinnamon in another bowl. Remove muffins from oven and cool for 2 minutes. Dip each muffin in melted butter, then roll in cinnamon sugar to coat. Serve muffins warm or at room temperature.

Mmmm these sound great. I heard you didn't have the best experience with Fired Urth :( But these remind me of their Donut Muffins which were delicious!

Yummy! Whenever I make donut holes they disappear super fast! The kids walk around with chipmunk cheeks thinking they're hiding them. LOL I'm off to check out the graham cracker creation...;)

I have wanted to make Maria's muffin/donut holes and so many of the popular recipes Ive seen around for them and never did it this year. Just posted my last pumpkin recipe of the season - but now I want to make these! Great job!

YUMMMMM i LOVE doughnut holes - the ones from dunkin that are coated to the max in sprinkles are my fav!!! so happy the shower went off with a bang :) my fav seasonal flavor is definitely cinnamon - but is that seasonal? besides that i love snickerdoodle - isn't that kind of christmasy?

I never thought to make donuts in a muffin tin - genius!! I'd have to say that pumpkin is my first seasonal favorite, but peppermint is a close second. This is the only time of year that I love flavored coffees for some reason!

All of the above flavors for me, but for some reason this season...I am really craving pumpkin.

I've pinned the recipe for the pumpkin holes. Can't wait to get home and make some.
