Fast Tuesday (cookies, pasta, salad)

Today seemed to fllllyyyy by at work! I was super busy working on a proposal which was fabulous! I am not a very good creative writer, but technical writing seems to come much more naturally :). After work, I got started on a big batch of Oatmeal Chocolate Chip cookies. My brother in-laws birthday is coming up and he is a HUGE fan of these cookies. I am shipping out the batch with a few of his other favorite foods :)

While the cookies were baking, I made up some light cauliflower and spinach pasta for Josh:

and then I headed out the door to teach Body Attack. When I got back, I wasn't really in the mood for pasta so I made up a big salad. I included romaine, cauliflower, broccoli slaw, pea pods, lots of white beans, sun dried tomatoes and topped it with olive oil and balsamic vinegar. On the side I had a plum.

Not sure whats on tap for dessert yet.

Thank you guys SO much for all the PB/AB brand suggestions. Your list included:

I hope to try each of these soon! Thank you again for all the suggestions!!!!

How sweet of you to send him cookies. I miss the days in middle and high school when birthdays meant batches upon batches of baked goods from friends!

I saw Barney Butter at Fresh Market and almost got it...until I saw the $9.49 price tag! I want to try it soo badly!

Oooo cookies, yes please. TJ's roasted salted almond butter is the ultimate AB in my book, and the cheapest, too! $4.99, can't beat it. I can send you some if you're not near a TJ's, just say the word! I truly believe that everyone must try this nut butter!

totally agree on the roasted/salted TJ's brand..soo good! Although Maranatha is my top fave- just not for my wallet :D

Good luck with the almond butter testing! I'm kind of glad I can only get one brand here... I would never be able to choose one otherwise :P

Have a great Wednesday!

YUM Nutbutters!! I tend to go with TJ's...it's usually the cheapest too, not to mention delish! Too bad they discontinued their cashew butter.

I didn't see your post recommending PB/AB but can I recommend Earth Balance PB? I just tried it recently, and it's pretty tasty!
